Chocolate Peanut Butter Cottage Cheese Protein Ice Cream

  • Ninja Creami Ice Cream Maker

Ingredients

ICE CREAM BASE

  • 1/2 Cup Good Culture 2% cottage cheese or cottage cheese of choice
  • 5 Fluid oz. Fairlife chocolate protein shake or shake of choice
  • 1/2 Cup unsweetened almond milk
  • 1/2 TBSP Unsweetened cocoa powder
  • 1/2 TBSP Simply Delish sugar free vanilla pudding mix
  • 7 grams Simply Delish sugar free chocolate pudding mix
  • 1/4 tsp Vanilla extract
  • 1 Pinch Salt

MIX-IN

  • 2 TBSP PB Fit peanut butter powder
  • 2-3 TBSP Water

GARNISH

  • 2 grams Unsalted peanuts crushed

Instructions

  • Place the ice cream base ingredients into the blender or food processor
  • Blend until smooth
  • Pour the ice cream base into the Ninja CREAMi pint
  • Place the pint into the freezer for 12-24 hours
  • Once ready, place the pint into the Ninja CREAMi and set on "light ice cream" mode 2-3 times or until creamy
  • While mixing, put the peanut butter powder and water into a bowl and mix until peanut butter consistency. A little water at a time
  • Once ice cream is done, place the peanut butter into the center of the ice cream then press the "mix-in" button
  • Garnish with crushed peanuts and enjoy
