Another great recipe using cottage cheese and it came out AMAZING!

Here is what you need:

  • Mini food processor or blender, HERE is the one I use
  • Ninja CREAMi ice cream maker, HERE is the Ninja CREAMi on Amazon
  • Good Culture 2% cottage cheese
  • Fairlife chocolate protein shake
  • Unsweetened almond milk
  • Unsweetened cocoa powder
  • Simply Delish sugar free chocolate pudding mix, click HERE for discount
  • Simply Delish sugar free vanilla pudding mix
  • Vanilla extract
  • Salt
  • PB Fit peanut butter powder, click HERE for PB powder on Amazon
  • Water
  • Unsalted peanuts

Here are the Ninja CREAMi ice cream makers. The one of the left is the Ninja CREAMi Deluxe and the right is the regular Ninja CREAMi that I use all of time. Click HERE for yours. 

I LOVE this brand of cottage cheese but if you cannot find this brand I suggest using Daisy brand.

Unsweetened milk I always have on hand and I get from Costco.

 

Unsweetened cocoa powder is something that makes this ice cream even more chocolaty.

Here is how to make it:

  1. In the blender place the cottage cheese, Fairlife chocolate protein shake, unsweetened almond milk, both pudding mixes, cocoa powder, vanilla and salt. 
  2. Blend until smooth 
  3. Pour the mixture into the Ninja CREAMi pint
  4. Place the pint into the freezer for 12-24 hours
  5. Once ready, place the pint in the Ninja CREAMi 
  6. Press the “light ice cream” mode 2-3 times or until creamy
  7. While blending mix the peanut butter powder with some water until peanut butter consistency
  8. Put the peanut butter into the center for the ice cream and press “mix in”
  9. Once done add some crushed peanuts and enjoy

Ingredients

ICE CREAM BASE

  • 1/2 Cup Good Culture 2% cottage cheese or cottage cheese of choice
  • 5 Fluid oz. Fairlife chocolate protein shake or shake of choice
  • 1/2 Cup unsweetened almond milk
  • 1/2 TBSP Unsweetened cocoa powder
  • 1/2 TBSP Simply Delish sugar free vanilla pudding mix
  • 7 grams Simply Delish sugar free chocolate pudding mix
  • 1/4 tsp Vanilla extract
  • 1 Pinch Salt

MIX-IN

  • 2 TBSP PB Fit peanut butter powder
  • 2-3 TBSP Water

GARNISH

  • 2 grams Unsalted peanuts crushed

Instructions

  • Place the ice cream base ingredients into the blender or food processor
  • Blend until smooth
  • Pour the ice cream base into the Ninja CREAMi pint
  • Place the pint into the freezer for 12-24 hours
  • Once ready, place the pint into the Ninja CREAMi and set on "light ice cream" mode 2-3 times or until creamy
  • While mixing, put the peanut butter powder and water into a bowl and mix until peanut butter consistency. A little water at a time
  • Once ice cream is done, place the peanut butter into the center of the ice cream then press the "mix-in" button
  • Garnish with crushed peanuts and enjoy
