Crockpot Tomato and Basil Soup

  • 1 Crockpot or Dutch oven / large pot
  • Immersion blender or blender

Ingredients

TOMATO SOUP INGREDIENTS

  • 8 Large Tomato on the vine tomatoes
  • 10-12 Small Tomato on the vine tomatoes
  • 2 Bell peppers Seeded and cut in half
  • 2 Small Onions Peeled and cut in half
  • 2 TBSP Garlic minced
  • 1/2 Cup Fresh basil
  • 1 TBSP Italian seasoning
  • 16 ounces Kettle & Fire Vegetable broth or chicken broth
  • 1 tsp Chicken bouillon
  • Salt to taste
  • Pepper to taste

ADD-IN

  • 1/2 Cup Unsweetened almond milk

Instructions

  • Add all of the ingredients into the crockpot besides the almond milk
  • Press low setting and cook on low for 4 hours or high for 2
  • Once done, take the immersion blender and blend until smooth
  • Add the almond milk and enjoy
