Crockpot Tomato and Basil Soup

Here is what you will need:
- Crockpot or Dutch Oven
- Immersion blender
- Tomato on the vine (small and large)
- Onion
- Bell pepper
- Garlic
- Kettle & Fire vegetable broth or chicken broth
- Chicken bouillon (optional)
- Fresh basil
- Italian seasoning
- Salt
- Pepper
- Unsweetened almond milk
Here is how to make it:
- Place all of the ingredients into the crockpot (besides unsweetened almond milk)
- Place on low for 4 hours or high for 2
- Once done, either take an immersion blender and blend in the crockpot or place all of the ingredients into a blender and back into the crockpot to keep warm.
- Add the unsweetened almond milk, season to taste with salt and pepper and enjoy

- 1 Crockpot or Dutch oven / large pot
- Immersion blender or blender
Ingredients
TOMATO SOUP INGREDIENTS
- 8 Large Tomato on the vine tomatoes
- 10-12 Small Tomato on the vine tomatoes
- 2 Bell peppers Seeded and cut in half
- 2 Small Onions Peeled and cut in half
- 2 TBSP Garlic minced
- 1/2 Cup Fresh basil
- 1 TBSP Italian seasoning
- 16 ounces Kettle & Fire Vegetable broth or chicken broth
- 1 tsp Chicken bouillon
- Salt to taste
- Pepper to taste
ADD-IN
- 1/2 Cup Unsweetened almond milk
Instructions
- Add all of the ingredients into the crockpot besides the almond milk
- Press low setting and cook on low for 4 hours or high for 2
- Once done, take the immersion blender and blend until smooth
- Add the almond milk and enjoy
