  • 1 Large mixing bowl

Ingredients

SALAD

  • 4 Cups Cucumbers Large dice
  • 1 Cup Chickpeas Drained & rinsed
  • 1/2 Medium Red onion Sliced thin
  • 1 TBSP Fresh garlic minced
  • 1 Cup Fat free feta cheese Atheno's brand
  • 1/3 Cup Fresh parsley Chopped
  • 1/3 Cup Fresh cilantro Chopped
  • 1/3 Cup Fresh mint Chopped
  • Salt to taste
  • Black pepper to taste

DRESSING

  • 1 tsp Avocado oil
  • 1 TBSP Red wine vinegar
  • 1 TBSP Fresh lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  • In a large mixing bowl, combine all of the salad ingredients
  • Season with salt and pepper to taste
  • Add the dressing and serve right away or place in the refrigerator.
