Cucumber Salad with Feta & Chickpeas
When I think of the summer, I think of a lot of side dishes and salads.
I love being able to pack up a dish like this and take it to the beach or just down by the pool.
Enjoy 1/2 a cup of this salad for 0 WW and 76 calories.
Here is what you need:
- English cucumbers
- Canned chickpeas
- Red onion
- Fat free feta cheese
- Garlic
- Cilantro
- Parsley
- Mint
- Salt
- Pepper
- Red wine vinegar
- Avocado oil
- Lemon juice
Here is how to make it:
- Dice up the cucumbers, add to bowl
- Drain and rinse the chickpeas, add to bowl
- Slice red onions thin, add to bowl
- Mince garlic, add to bowl
- Chop up all of the herbs, add to bowl
- Season with salt and pepper to taste
- Add feta cheese
- Drizzle the dressing and enjoy right away or place in the fridge

- 1 Large mixing bowl
Ingredients
SALAD
- 4 Cups Cucumbers Large dice
- 1 Cup Chickpeas Drained & rinsed
- 1/2 Medium Red onion Sliced thin
- 1 TBSP Fresh garlic minced
- 1 Cup Fat free feta cheese Atheno's brand
- 1/3 Cup Fresh parsley Chopped
- 1/3 Cup Fresh cilantro Chopped
- 1/3 Cup Fresh mint Chopped
- Salt to taste
- Black pepper to taste
DRESSING
- 1 tsp Avocado oil
- 1 TBSP Red wine vinegar
- 1 TBSP Fresh lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- In a large mixing bowl, combine all of the salad ingredients
- Season with salt and pepper to taste
- Add the dressing and serve right away or place in the refrigerator.
