Grilled Veggie Salad with Feta Cheese

Summer season is for grilling and I'm here for it.

Equipment

  • 1 Large bowl
  • Knife

Ingredients

  • 1/2 Pounds Asparagus
  • 2 Each Bell peppers (red or orange) Cleaned and Halved
  • 1 each Zucchini Halved lengthwise
  • 1 each Yellow squash Halved lengthwise
  • 1 cup Artichokes (in water) Halved
  • 2 Large Radicchio Wedges
  • 1/2 Cup Fat free feta cheese I use Atheno's brand
  • 1/3 Cup Parsley Chopped
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Dried oregano
  • 3 TBSP Balsamic vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat your grill to a medium high heat
  • Coat the grill grates with some avocado oil
  • Place all veggies besides the artichokes onto the grill and char both sides
  • Take off and place onto a sheet pan
  • Sprinkle the veggies while still warm with salt and pepper
  • Pour all the veggies from the grill into a large bowl followed by the artichokes
  • Add the garlic powder, onion powder, dried oregano, fresh chopped parsley, feta cheese and balsamic vinegar
  • Season to taste with salt and pepper
  • Enjoy!

Notes

Recipe makes 6 servings at 1 cup per serving
