Grilled Veggie Salad with Feta Cheese
Here is another wonderful grilled veggie salad for the summer!

Makes a great meal prep and tastes amazing!
Pair with your favorite protein!
Here is what you need:
- Grill
- Avocado oil
- Radicchio
- Bell peppers
- Asparagus
- Squash
- Zucchini
- Artichokes
- Fat free feta
- Garlic powder
- Onion powder
- Dried oregano
- Balsamic vinegar
- Parsley
- Cilantro
- Salt
- Pepper
Grilled Veggie Salad with Feta Cheese
Equipment
- 1 Large bowl
- Knife
Ingredients
- 1/2 Pounds Asparagus
- 2 Each Bell peppers (red or orange) Cleaned and Halved
- 1 each Zucchini Halved lengthwise
- 1 each Yellow squash Halved lengthwise
- 1 cup Artichokes (in water) Halved
- 2 Large Radicchio Wedges
- 1/2 Cup Fat free feta cheese I use Atheno's brand
- 1/3 Cup Parsley Chopped
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Dried oregano
- 3 TBSP Balsamic vinegar
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your grill to a medium high heat
- Coat the grill grates with some avocado oil
- Place all veggies besides the artichokes onto the grill and char both sides
- Take off and place onto a sheet pan
- Sprinkle the veggies while still warm with salt and pepper
- Pour all the veggies from the grill into a large bowl followed by the artichokes
- Add the garlic powder, onion powder, dried oregano, fresh chopped parsley, feta cheese and balsamic vinegar
- Season to taste with salt and pepper
- Enjoy!
