Grilled Veggie Salad with Feta Cheese


Here is another wonderful grilled veggie salad for the summer!

O WW and only 61 calories.

Makes a great meal prep and tastes amazing!

Pair with your favorite protein!

Here is what you need:

  • Grill
  • Avocado oil
  • Radicchio
  • Bell peppers
  • Asparagus
  • Squash
  • Zucchini
  • Artichokes
  • Fat free feta
  • Garlic powder
  • Onion powder
  • Dried oregano
  • Balsamic vinegar
  • Parsley
  • Cilantro
  • Salt
  • Pepper



Grilled Veggie Salad with Feta Cheese

Summer season is for grilling and I'm here for it.
Prep Time10 minutes
Servings: 6


  • 1 Large bowl
  • Knife


  • 1/2 Pounds Asparagus
  • 2 Each Bell peppers (red or orange) Cleaned and Halved
  • 1 each Zucchini Halved lengthwise
  • 1 each Yellow squash Halved lengthwise
  • 1 cup Artichokes (in water) Halved
  • 2 Large Radicchio Wedges
  • 1/2 Cup Fat free feta cheese I use Atheno's brand
  • 1/3 Cup Parsley Chopped
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Dried oregano
  • 3 TBSP Balsamic vinegar
  • Salt to taste
  • Black pepper to taste


  • Preheat your grill to a medium high heat
  • Coat the grill grates with some avocado oil
  • Place all veggies besides the artichokes onto the grill and char both sides
  • Take off and place onto a sheet pan
  • Sprinkle the veggies while still warm with salt and pepper
  • Pour all the veggies from the grill into a large bowl followed by the artichokes
  • Add the garlic powder, onion powder, dried oregano, fresh chopped parsley, feta cheese and balsamic vinegar
  • Season to taste with salt and pepper
  • Enjoy!

    Hi Chef Allie: I watch you on Great Day 9a on Mondays and kudos to you for losing lots of weight. I too have lost over 100 lbs over the years and have found stability in a low carb/gluten free/clean eating lifestyle.
    My main concern with some of your ingredients is that they have have not so clean ingredients. I picked up the powdered Hidden Valley in the grocery store and was alarmed at the ingredients. Maltodextrin should be avoided and can cause us to be hungry when we are not, does something to the blood sugar. I do like the salt free spices you use and ordered them from Amazon. I am a lot older than you and have been on this weight loss journey my entire adult life. The best advice I can give you is to eat full fat. Our bodies need the fat to metabolize fat soluble nutrients and for proper hormone balancing, which is especially important to us women. I was on that fat free road on WW years ago and had hip pain and really dry hands, finally made the connection that I was not absorbing Vitamin D (fat soluble) and the dry hands from lack of fat as well. The recipe you presented today looks delish, but I’ll be making it using full fat feta. Keep up the good work!
