Jalapeno Popper Tuna Salad

A delicious version of jalapeno popper in a tuna salad form

Equipment

  • 1 Mixing bowl
  • 1 Sheet pan
  • Parchment paper

Ingredients

  • 1 Can Wild Planet albacore tuna in water or tuna of choice
  • 1/4 Ciup Jalapeno Chopped fine
  • 1/4 Cup Scalllions Chopped fine
  • 1/4 Cup Onion Chopped fine
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Dak's Green Zest or Italian seasoning
  • 1/4 tsp Galic powder
  • 1/4 tsp Onion powder
  • 1 tsp Hidden Valley ranch seasoning
  • 1/3 Cup Non-fat Greek yogurt
  • 1/2 Cup Fat free cheddar cheese Kraft brand
  • 2 Slices Center cut bacon Chopped fine

Instructions

  • Preheat oven to 400 degrees
  • Cook the bacon until crispy and set aside to cool.
  • While bacon is cooking add the tuna into a bowl. If using Wild Planet brand, no need to drain can.
  • Slice the jalapeno top off, slice in half, remove seeds and membranes then chop super fine.
  • Add the chopped jalapeno to the bowl (more or less depending on how spicy you like it).
  • Chop the scallions and onions. Add them into the bowl.
  • Add all the seasonings and season with salt and pepper to taste.
  • Next add the non-fat Greek yogurt and cheddar cheese.
  • Once bacon is cooled off, chop and add to the bowl.
  • Eat right away or place into the fridge for later.
