Ingredients
For the Rice Base:
- 1 package Palmini hearts of palm rice
- Salt
- Black pepper
- Scallions
- Sesame oil (optional)

Instructions
1. Prepare the Rice Base
- Drain and rinse the Palmini hearts of palm rice thoroughly.
- In a pan over medium heat, warm the rice with sesame oil, salt, pepper, and scallions for about 5 minutes.
- Remove from heat and set aside.
2. Make the Tuna Mixture
- In a bowl, combine Wild Planet tuna, whipped cottage cheese, salt, pepper, garlic powder, and onion powder.
- Mix well until fully combined and creamy.
3. Assemble the Bowl
- Add the seasoned Palmini rice as the base in a serving bowl.
- Top with tuna mixture in the center.
- Arrange sliced cucumbers, grape tomatoes, avocado, and red onion around the tuna.
- Sprinkle sesame seeds over the top.
- Add wasabi and hot sauce as desired for extra spice.

- Take the cottage cheese and place into a blender, blend until smooth creating whipped cottage cheese
- Pour back into the container and set aside
- Drain and rinse the Palmini rice very well
- Heat a pan to meadium heat
- Spray lightly with avocado oil
- Add the Palmini rice
- Lower to low heat and let sit in the pan for about 5 minutes creating a less moist rice
- Season to taste with salt, pepper, Asian seasoning (if you have it)
- Drizzle a tiny bit of sesame oil (optional) and add the scallions
- Cut the heat and let cool offย
- In a separate bowl, add the can of tuna (do not drain Wild Planet brand), fresh squeeze of lemon juice, whipped cottage cheese, garlic powder, onion powder, salt and pepper
- Mix until combined
- Once the rice has cool a little place into a bowl
- Add the tuna, sliced cucumber, tomatoes, sliced onions and avocado
- Add wasabi (optional) and garnish with sesame seeds and hot sauce (optional)
