Crockpot White Chicken Chili – UPDATED RECIPE
Equipment
- Crockpot
Ingredients
Charred Corn
- Avocado oil spray
- 1 15.25 oz. can Corn, no salt added drained
- salt & pepper to taste
Chili Ingredients
- 2 pounds Chicken breast
- 1 small onion diced
- 2 TBSP Garlic minced
- 1 10 oz. can Green enchilada sauce
- 1-2 4 oz. can Green chiles
- 1 15.5 oz. can Northern white beans drained and rinsed
- 1 15.5 oz. can Cannellini beans drained and rinsed
- 1 15.5 oz. can Pinto beans drained and rinsed
- 2 cups Chicken bone broth
- 2/3 cup Evaporated milk
- 1 TBSP Cumin
- 1 TBSP Chili powder
- 1 tsp Oregano
- 1 tsp Paprika
- 1/2 tsp Cayenne optional
- Salt and pepper to taste
Garnish
- 1/2 cup Cilantro chopped (optional)
- 1 lime juiced
TOPPINGS (optional)
- Salsa
- Whipped cottage cheese or nonfat Greek yogurt
- Shredded cheddar cheese
- Crushed tortilla chips
- Avocado slices or guacamole
- Hot sauce
Instructions
Charred corn
- In a cast iron pan or saute pan, spray lightly with avocado oil and heat to medium
- Drain the can of corn and add to the pan
- Cook the corn and let the corn char then season with salt and pepper to taste
Chili Steps
- Add all of the chili ingredients into the crockpot
- Mix lightly and set to low for 6-8 hours
- Remove the chicken, shred and add back into the crockpot
- Add the fresh lime juice and cilantro
- Let sit for about 10 minutes then serve and garnish with your desired toppings
