Roasted Maple Delicata Squash with Whipped Herb Goat Cheese
Ingredients
- 2 medium Delicata squash
- 1 TBSP Avocado oil
- 1/4 cup Maple syrup or sugar free pancake syrup
- 1/2 tsp Onion powder
- 1/2 tsp Garlic power
- 1/8 tsp Paprika
- 1/4 tsp Cinnamon
- Salt to taste
- Pepper to taste
WHIPPED HERB GOAT CHEESE
- 4 oz Goat cheese
- 2-3 TBSP Fat free Fairlife milk
- 2 tsp Dried chives
- 2 tsp Dried parsley
- 1/2 tsp Onion power
- 1/2 tsp Garlic powder
- Salt to taste
- Pepper to taste
Instructions
- preheat the oven to 450 degrees
- Slice the delicata in half (lengthwise) and scoop the seeds out
- Slice the delicata into half moons
- Place the squash into a bowl
- Add the avocado oil, maple syrup, onion powder, garlic powder, paprika, cinnamon and season to taste with salt and pepper
- Line the sheet pan with parchment paper and place into the oven for 10-15 minutes or until fork tender
- Remove and let cool
- In a small food processor add all the ingredients of the whipped goat cheese and blend until smooth
- Add more milk if desired to make a more loose consistency
- Drizzle over the squash and enjoy
