👩‍🍳 Instructions (Layered Method)

Step 1: Cook the Chicken

  1. Preheat oven to 350°F
  2. Cut chicken into 1-inch cubes
  3. Toss with taco seasoning
  4. Spread on a baking sheet
  5. Bake for ~20 minutes or until fully cooked

Step 2: Build Each Bowl (THIS is the magic 👇)

In each container, layer:

  1. 1/4 cup enchilada sauce
  2. 1 tortilla
  3. 2 oz cooked chicken
  4. 7g mozzarella + 7g 3-cheese blend
  5. 1 TBSP pinto beans + 1 TBSP black beans
  6. 1 TBSP green chiles
  7. 1 TBSP nonfat Greek yogurt

Add the Second Layer:

  1. 1 tortilla
  2. Remaining 1/4 cup enchilada sauce
  3. 2 oz cooked chicken

Step 3: Bake

  1. Cover containers with foil
