High Protein Cinnamon Puff with Protein Drizzle

Okay, if you remember the cloud bread recipe I shared a few months agoโฆ I have been making it A LOT since then, and of course I couldnโt leave it alone. ๐
Iโve been playing around with the ingredients, amounts and technique, and this version is SO much better.
Itโs fluffy, sweet, loaded with cinnamon and finished with the easiest creamy protein drizzle. The entire thing packs almost 50 grams of protein, which makes it such a fun way to switch up breakfast, a post-workout meal or even something sweet when youโre trying to hit your protein goals.
And despite how impressive it looks when it comes out of the oven, the ingredient list is ridiculously simple.
Why Youโll Love This Recipe
There are so many reasons this has become one of my favorite high-protein recipes:

- Only a handful of ingredients
- Very low in fat
- Light, fluffy and HUGE in volume
- Perfect when you want something sweet
- Easy to customize with different protein powder flavors
- Great for breakfast, post-workout or even dessert
- No complicated baking skills required
The stand mixer does most of the work for you!
Ingredients
For the Cinnamon Protein Cloud
- 1 cup egg whites*
- 1 teaspoon cornstarch
- 6 packets stevia, divided
- Cinnamon, to taste โ I use A LOT!
- Splash of vanilla extract
- Cooking spray
For the Protein Drizzle
- 1 scoop protein powder of choice, I HIGHLY recommend THIS ONE
- **PHORMULA-1 CTC I use very often for this as well as Cafe Latte (both only 100 calories a scoop and 23 grams of protein)**
- Water, added 1/4 teaspoon at a time
- Cinnamon, for topping
- Tiny pinch of salt
*For my egg whites, I used approximately 3/4 cup liquid egg whites and then cracked fresh eggs and used the whites to fill the measuring cup the rest of the way to 1 cup. (OPTIONAL) you could use 1 cup just liquid egg whites.ย
How to Make It
Step 1: Preheat Your Oven
Preheat your oven to 400ยฐF.
Line your baking pan with parchment paper and lightly spray the parchment with cooking spray.
Step 2: Whip the Egg Whites
Pour the egg whites into the bowl of a stand mixer fitted with the whisk attachment.
Turn the mixer to its highest setting and whip the egg whites for approximately 5โ10 minutes.
The exact amount of time will vary, so watch the egg whites rather than the clock.
You are looking for a HUGE increase in volume and, most importantly, stiff peaks.
When you lift the whisk attachment, the egg whites should hold their shape instead of collapsing back into the bowl.
Step 3: Gently Add the Flavor
Once stiff peaks have formed, remove the bowl from the stand mixer.
This next part is important:
FOLD. DO NOT STIR.
Add:
- 3 packets stevia
- Cornstarch
- A generous amount of cinnamon
- Splash of vanilla
Using a spatula, very gently fold everything into the egg whites.
You don’t want to knock all of that beautiful air out of the egg whites.
Once incorporated, add the remaining:
- 3 packets stevia
- More cinnamon
Gently fold again just until combined.
Step 4: Shape
Carefully transfer the whipped egg-white mixture into your prepared pan.
Be gentle!
You worked hard creating all of that volume, so you don’t want to press or smash it down.
Lightly shape the mixture into an even mound.
Step 5: Bake
Bake at 400ยฐF for approximately 12โ13 minutes.
The outside should begin to look lightly golden while the inside stays soft and fluffy.
Make the Protein Drizzle
While your protein cloud is baking, make the drizzle.
Place 1 scoop of your favorite protein powder into a small bowl. Iย HIGHLYย recommend this brand HERE
Now comes the most important part:
ADD THE WATER VERY, VERY SLOWLY.
I’m talking about approximately 1/4 teaspoon at a time.
Stir after each addition until the protein powder turns into a thick, smooth drizzle.
It is MUCH easier to add more water than it is to fix a protein drizzle that has become too thin!
Depending on the protein powder you use, the exact amount of water needed will vary.
Finish & Serve
Remove the protein cloud from the oven.
Drizzle that creamy protein mixture all over the top.
Finish with:
- More cinnamon
- A tiny pinch of salt
That little bit of salt is SO GOOD with the sweetness and cinnamon.
Then grab a fork and ENJOY!
Estimated Macros
Using approximately 1 cup of egg whites and 1 scoop of whey protein powder:
Approximately 235 calories and 50 grams of protein for the entire recipe.
Macros will vary depending on the exact egg whites and protein powder used. For example, 1st Phorm Phormula-1 currently provides 23 grams of protein per scoop.
Chef Allie’s Tips
Don’t Rush the Egg Whites
The stiff peaks are what give this recipe its volume. If the whites haven’t reached stiff peaks yet, keep whipping.
Fold GENTLY
This might be the biggest difference between an airy protein cloud and a flat one. Use your spatula to carefully fold the ingredients through the egg whites instead of aggressively mixing them.
Don’t Dump Water Into the Protein
Seriously. ๐ Start with 1/4 teaspoon at a time.
Protein powder can go from thick to watery VERY quickly.
Change Up the Protein Flavor
This is where you can have fun with it!
Vanilla, cinnamon, chocolate, caramel, cookie-inspired flavors and other dessert-style protein powders can completely change the flavor without changing the basic recipe.
Don’t Skip the Salt
You only need the tiniest pinch, but it helps balance the sweetness and makes the cinnamon and protein drizzle pop.
A High-Protein Breakfast That Feels Like Dessert
One of my favorite things about eating high protein is finding ways to make it FUN.
Protein doesn’t have to mean another plain chicken breast or protein shake.
This Cinnamon Protein Cloud is sweet, fluffy, easy to make and gives you almost 50 grams of protein in one giant serving.
