Sheet Pan Ranch Chicken with Potatoes and Green Beans

Sheet Pan Ranch Chicken with Potatoes and Green Beans

This Sheet Pan Ranch Chicken with Potatoes and Green Beans is one of those easy, high-protein meals that checks all the boxes: simple ingredients, minimal prep, tons of flavor and an entire balanced meal made right in the oven.

Tender bite-sized chicken breast is seasoned with ranch, garlic, onion, dill and paprika, then roasted alongside crispy Yukon Gold and red potatoes and fresh green beans. It’s hearty enough for dinner, meal-prep friendly and easy to customize depending on what you have on hand.

One of my favorite things about this recipe is that you can technically prepare everything on one large sheet pan, but I personally prefer using separate pans. It gives me more control over the cooking time of each ingredient. The potatoes need the longest, the chicken goes in next and the green beans only need a short amount of time at the end.

Either method works!

How to Make Sheet Pan Ranch Chicken with Potatoes and Green Beans

Step 1: Preheat the Oven

Preheat your oven to 400°F.

Prepare your sheet pans by spraying them well with avocado oil spray or lining them with parchment paper.

Step 2: Prepare the Potatoes

Cut the Yukon Gold and Red Bliss potatoes into approximately 1-inch cubes.

Place the potatoes onto a well-greased large sheet pan.

Lightly spray them with avocado oil and season generously with ranch seasoning, dried dill, garlic powder, onion powder, paprika, salt and black pepper.

Toss everything together until the potatoes are evenly coated.

Spread the potatoes into an even layer so they have enough room to roast instead of steam.

Place them into the preheated oven while you prepare the chicken and green beans.

Step 3: Prepare the Chicken

Cut the chicken breasts into approximately 1-inch bite-sized pieces.

Place the chicken onto a separate greased or parchment-lined sheet pan.

Lightly spray with avocado oil and season with ranch seasoning, dried dill, garlic powder, onion powder, paprika, salt and black pepper.

Toss until all of the chicken is evenly coated, then spread it into a single layer.

Place the chicken into the oven with the potatoes.

Step 4: Prepare the Green Beans

Trim the ends from the fresh green beans and place them onto a smaller sheet pan.

Lightly spray with avocado oil.

Season with salt, pepper, garlic powder, onion powder, paprika, a little ranch seasoning and extra dried dill.

Toss to coat and spread into an even layer.

Since the green beans cook much faster than the potatoes, add them to the oven last.

Step 5: Roast Until Done

Continue roasting until:

  • The potatoes are tender on the inside and golden around the edges.

  • The chicken reaches an internal temperature of 165°F.

  • The green beans are tender but still have a little bite to them.

Depending on your oven and the size of your pieces, the potatoes will usually take around 30–40 minutes, chicken around 18–25 minutes, and green beans around 12–18 minutes.

Always use doneness rather than time alone as your guide.

One-Sheet-Pan Method

Don’t want to use multiple sheet pans? You can absolutely make this recipe on one large sheet pan.

Start by adding the seasoned potatoes to the pan and roast them for approximately 10 minutes.

Remove the pan from the oven and add the seasoned chicken.

Return everything to the oven for another 10 minutes.

Then add the seasoned green beans and continue roasting until the potatoes are tender, the chicken reaches 165°F internally and the green beans are cooked to your liking.

I personally prefer using separate pans because it gives me more control. If the potatoes need a few extra minutes or the green beans are finished early, I can easily remove one pan without overcooking another ingredient.

Ingredient Benefits

Chicken Breast

Chicken breast is the protein powerhouse of this recipe.

It’s an excellent source of lean protein, which helps support muscle maintenance, recovery and satiety. Protein also makes this sheet pan meal especially satisfying and a great option for meal prep.

Three large chicken breasts provide roughly 150+ grams of protein for the entire recipe, depending on their exact weight.

Yukon Gold and Red Bliss Potatoes

Potatoes sometimes get a bad reputation, but they’re an incredibly versatile whole-food carbohydrate.

They provide:

  • Potassium

  • Vitamin C

  • Vitamin B6

  • Carbohydrates for energy

  • Fiber, especially when you leave the skins on

Using a combination of Yukon Gold and Red Bliss potatoes also gives the dish a great mix of textures and colors.

Fresh Green Beans

Green beans add volume, color, crunch and nutrients without contributing many calories.

They’re a good source of:

  • Fiber

  • Vitamin C

  • Vitamin K

  • Folate

  • Plant compounds and antioxidants

One pound of green beans adds a generous amount of vegetables to this meal and helps make each serving feel much larger and more satisfying.

Avocado Oil Spray

Avocado oil is a source of primarily monounsaturated fat.

Using avocado oil spray makes it easier to lightly coat the ingredients without pouring large amounts of oil onto the sheet pans. Just keep in mind that oil sprays aren’t truly calorie-free if you’re using a significant amount.

Ranch Seasoning

Ranch seasoning is what gives this recipe its savory, tangy flavor without needing a heavy ranch dressing or cream-based sauce.

Homemade ranch seasoning lets you control the ingredients and sodium, while a packet makes this recipe incredibly convenient.

If you’re watching sodium, compare ranch seasoning labels or make your own.

Dried Dill

Dill gives the recipe that classic ranch flavor and adds a fresh, herby element without adding meaningful calories.

Garlic Powder

Garlic powder adds plenty of savory flavor without requiring fresh garlic preparation.

Garlic also contains naturally occurring plant compounds, although seasonings are generally used in amounts too small to make them a major source of nutrients.

Onion Powder

Onion powder adds sweetness and savory depth and helps create that classic ranch-seasoned flavor.

Paprika

Paprika brings mild warmth, color and another layer of flavor to the chicken and vegetables.

Salt and Black Pepper

Salt enhances the flavors of every ingredient while black pepper adds a subtle bite.

Because ranch seasoning can already contain a significant amount of sodium, I recommend seasoning with salt lightly at first and adjusting after cooking.

Estimated Macros

Nutrition will vary depending on the exact weight of your chicken breasts, how much avocado oil spray you use and the brand or amount of ranch seasoning.

For this estimate, I used approximately:

  • 1½ lb raw boneless skinless chicken breast

  • 1½ lb mixed potatoes

  • 1 lb fresh green beans

Avocado oil spray and ranch seasoning are not included because the amounts weren’t measured.

Meal Prep Tips

Divide the chicken, potatoes and green beans evenly into meal-prep containers and refrigerate once completely cooled.

For the best texture, reheat in an air fryer or oven when possible. The microwave works too, but the potatoes won’t stay quite as crispy.

You can also switch things up throughout the week by serving it with:

  • A drizzle of ranch

  • Greek yogurt ranch

  • Hot sauce

  • Buffalo sauce

  • Fresh herbs

  • A sprinkle of Parmesan

  • A little extra dried dill

Easy Substitutions

No Yukon Gold potatoes? Use all red potatoes, baby potatoes or another roasting potato.

You can also substitute broccoli, Brussels sprouts, asparagus or carrots for the green beans. Just adjust the roasting time accordingly.

Boneless skinless chicken thighs can also be used instead of chicken breast, although the calories and fat will be higher.

The Bottom Line

This Sheet Pan Ranch Chicken with Potatoes and Green Beans is exactly the kind of meal I love having in my rotation: simple, filling, high in protein and made with ingredients the entire family can enjoy.

The ranch, garlic and dill seasoning gives everything so much flavor that you don’t need a heavy sauce, and because the chicken, potatoes and vegetables are all cooked at the same time, you’ve got an entire balanced meal ready without spending your night standing over the stove.

Whether you’re making it for an easy weeknight dinner or portioning it out for meal prep, this one is definitely worth adding to your rotation.
