Equipment

  • Air fryer or oven
  • Bowl for mxing

Ingredients

  • 3 oz. Cooked chicken or rotisserie
  • Dak's Nothin But Ranch to taste
  • Dak's Butt Kickin Buffalo to taste
  • 1 Light laughing cow wedge
  • 2 TBSP Bolthouse Cucumber Ranch Yogurt Dressing
  • Frank's Hot Sauce to taste
  • Salt & Pepper to taste
  • 1 Joseph's Flax, oat bran & whole wheat pita
  • 20 grams FF Cheddar Cheese
  • Sliced tomatoes optional
  • Cucumber slices
  • 1 Cup Micro Greens or romaine/mixed greens

Instructions

  • In a bowl shred up the chicken and then add Dak's seasonings, laughing cow wedge, hot sauce and 1 TBSP of the dressing. Season to taste with salt & pepper.
  • Sprinkle the cheddar cheese on half of the pita followed by the chicken.
  • Close up the pita making sure the chicken and cheese side is weighing down empty side.
  • Place into air fryer at 375 or oven until golden brown (About 2-3 minutes)
  • Open up the pita and add the tomato slices, cucumber, micro greens and other TBSP of dressing and enjoy.

  • Air fryer or oven
  • Microwave
  • Saute pan
  • Small sauce pan for cooking pasta
  • Blender or mini food processor

Ingredients

  • Serving Barilla Protein+ Farfalle pasta dry

CHICKEN

  • 1 Chicken breast
  • Dak's Italian Blast to taste
  • Dak's Nothin But Ranch to taste
  • Salt & Pepper to taste

PASTA SAUCE

  • Avocado oil spray
  • 1 Shallot chopped
  • 1 TBSP Garlic minced
  • 1 TBSP Tomato paste
  • 1/2 Cup Roasted red peppers in water, Blended
  • 1/3 Cup Good Culture 2% Cottage Cheese Blended
  • 1/4-1/2 Cup Reserved pasta water
  • 1/4 Cup Kettle & Fire Classic Chicken Bone Broth Link in notes for discount
  • 1 Light Laughing Cow wedge
  • 1/2 tsp Dried oregano
  • Salt & Pepper to taste

SIDES

  • 1 Bag Steam in bag broccoli seasoned as you wish
  • Salt & Pepper to taste
  • 1 tsp Grated Parmesan Cheese to garnish

Instructions

  • First get the water going for your pasta
  • Next, season chicken to your liking and cook until 165 degrees. Set aside until ready to eat. I cooked mine in my air fryer at 380 degrees for about 10-12 minutes.
  • In a mini food processor add the roasted red peppers and cottage cheese. Set aside.
  • In a small sauté pan, spray bottle with avocado oil. Add the shallots and cook until translucent Add the garlic and cook for an additional 30 seconds.
  • Add the tomato paste and seasonings.
  • Alternating a little at a time. add the pasta water, chicken bone broth and roasted red pepper sauce. Adding slowly so the sauce doesn't break.
  • Season to taste with salt, pepper an additional seasoning if needed.
  • Add the laughing cow wedge and pasta. Fold in until melting and mixed all together.
  • Plate and add chicken and broccoli
  • Garnish and enjoy

Ingredients

  • 8 0Z Chicken Breast
  • 1 tsp Avocado oil
  • Salt to taste
  • Black pepper to taste

SAUCE

  • 4 Garlic cloves minced
  • 1 Cup low sodium fat free chicken broth
  • 1/4 Cup Fat free half and half
  • 8 Sundried tomatoes (in water, not oil) Chopped
  • 1/4 Cup Shredded parmesan
  • 1 TBSP Italian seasnoning
  • 1/3 Cup Cottage cheese blended, see notes

SIDES

  • 1 Bag Green beans Steam in bag
  • 1 Bunch Asparagus
  • 12 Little Potato Company Potatoes sliced in half
  • 1 tsp Dak's Nothin But Ranch seasoning to taste
  • Salt & pepper to taste

GARNISH

  • 3 TBSP Fresh parsely chopped
  • Fresh basil Chopped

Instructions

  • Preheat oven to 375
  • In an oven safe pan pour or spray avocado oil
  • While pan is heating up season chicken with salt, pepper and Italian seasoning
  • Place chicken in pan and sear on both sides, on medium high heat. Set aside ( DO NOT COOK ALL THE WAY THROUGH)
  • In the same pan as the chicken was in, turn heat down and place the minced garlic into the pan. Cook until fragrant.
  • Add the chicken stock/broth, fat free half and half and sun-dried tomatoes.
  • Slowly add the parmesan cheese and the blended cottage cheese into the pan.
  • Place chicken back into the pan making sure they are coated with sauce.
  • Bake in the oven for 15-20 minutes or until cooked all the way through or reached 165 internal temperatures.
  • Garnish with fresh basil & parsley
  • While chicken is cooking, place sliced potatoes into an air fryer or oven at 400. Season lightly with avocado oil spray, salt, pepper and ranch seasoning. Air fry until golden brown 8-10 minutes
  • Roast asparagus or place into air fryer at 400. Season lightly with avocado oil spray. Season with salt and pepper to taste. Microwave steam in bag green beans then sauté with a light spray of avocado oil and season with salt and pepper to taste.
