Here is a quick, easy and delicious recipe I made during my busy days as a stay-at-home mom/ food blogger.  My days here are so busy and I just need something easy and filling so this one was created.  Here is what you will need:

This was a dish that was a grab what you have and hopefully it turns our good dish!

This came out AMAZING! It was extremely easy to put together and the flavors was a sweet, savory with a little spice.

Serve over rice or with a bunch of sides like I did. I roasted a small squash, made a quick broccoli slaw with a side of steam in bag broccoli as well.

Made great for meal prep for the week as well.

 

Here is what you will need:

  • Crockpot
  • Chicken (Fresh or frozen)
  • BBQ sauce (I used sugar free)
  • No sugar added canned peaches or fresh
  • Red onions
  • Banana peppers
  • Dak’s BBQueen seasoning (optional)
  • Salt 
  • Pepper
  • Garlic

Here is the frozen chicken that I buy from Costco. It is the best price and the chicken is great.

You can use whatever BBQ sauce you’d like but I prefer to use this sugar free one from G Hughes

 

The convenience of the no sugar added peaches is great. You can use fresh but I do recommend peeling them prior to adding to the crockpot

This was a last minute decision adding the hot peppers and I’m glad I did. Broke up the sweetness from the BBQ sauce and the peaches.

I was originally going to use regular white onions but didn’t have enough so I went with the red onions. I like the color added into the dish as well.

Here is how to make it:

  1. Add the fresh or frozen chicken to the crockpot
  2. Spray lightly with avocado oil
  3. Season the chicken with salt and pepper to taste
  4. Add the garlic powder and BBQueen seasoning over the chicken
  5. Pour the BBQ sauce, peaches, onions, banana peppers and banana pepper juice over the chicken
  6. Set the crockpot to low for 6 hours
  7. Once done, either keep whole or shred
  8. Enjoy with your choice of sides

  • 1 Crockpot

Ingredients

  • 1 Pound Chicken breast fresh or frozen
  • Salt & pepper to taste
  • 1 tsp Dak's BBQueen seasoning optional
  • 1 tsp Garlic powder
  • 1/3 Cup Sugar free G Hughes BBQ sauce
  • 1 14.5 oz Demonte no sugar added peaches canned
  • 1/2 Cup Red onions sliced
  • 1/4 Cup Banana peppers
  • 2-3 TBSP Banana pepper juice

Instructions

  • Add the chicken to the crockpot
  • Spray lightly with avocado oil
  • Season with salt and pepper to taste
  • Add the BBQueen seasoning and the garlic powder
  • Pour the BBQ sauce, peaches, onions, peppers and pepper juice over the chicken
  • Set the crockpot to low for 6 hours
  • Once done, shred chicken (optional) or keep whole
  • Serve with your choice of sides and enjoy

Buffalo chicken anything is one of my favorites. I am also a fan of easy peasy meals. This one came together in less than 5 minutes and in the oven for about 15 minutes. 

I prepared some rotisserie chicken in my crockpot a few days before giving me some prepared chicken to use when needed. I also always have the other ingredients on hand most of the time giving me a meal ready to prepare.

The Eat Royo bagels are one of my favorites with the low calories and lots of protein added into them. 

Here is what you will need:

  • Cooked chicken or rotisserie chicken
  • Hot sauce
  • Fat free cheddar cheese
  • Ranch seasoning
  • Low carb Eat Royo bagels
  • Light laughing cow wedges
  • Bolthouse ranch yogurt dressing
  • Scallions 

This is the seasoning I use to make a homemade rotisserie chicken using frozen or fresh chicken and place it into my crockpot for a low and slow cooked rotisserie chicken to use for meal prep.

Frank’s Red Hot sauce is the only hot sauce we use in our house for buffalo chicken. It is just the best!

You can use any cheese you would like, but the fat free cheddar is my favorite for a low calorie option.

Hidden Valley ranch seasoning is another ingredient that is always in this house. You can add this to so many things.

Light laughing cow wedges are a staple ingredient in my house. They are an amazing replacement for cream cheese or any soft cheese to make it low calorie.

I absolutely LOVE Bolthouse brand, especially the yogurt dressings.

 

 

 

How to make it:

  1. In a bowl combine the cooked chicken or rotisserie chicken with hot sauce, fat free cheddar cheese, ranch seasoning, and pepper to taste
  2. Take each light laughing cow wedge and smear one on each bagel half
  3. Take the chicken mixture and evenly distribute the chicken mixture onto both halves
  4. Place into a 375-degree oven and cook until toasty and cheese is melted
  5. Garnish with the blue cheese dressing, scallions and more black pepper to taste

BBQ CHICKEN

  • 3 1/2 oz BBQ Chicken

BBQ SAUCE/MARINADE

  • G Hughes sugar free BBQ sauce or sauce of your choice
  • Dak's BBQueen seasoning or seasoning of your choice
  • Salt & pepper to taste

SALAD FIX INS FOR ONE

  • 3 Cups Romaine Chopped
  • 1/4 Cup Charred corn or canned

  • 1/2 Cup Cucumbers chopped
  • 1 1/2 Slices of Sargento Ultra Thin cheese cheese of your choice
  • 1/4 Cup Red onions Diced or sliced
  • 2 TBSP Bolthouse Honey BBQ yogurt dressing

Instructions

  • In a bag or bowl place the chicken breasts
  • Season with salt, pepper & Dak's BBQueen seasoning
  • Add the BBQ sauce in and marinade for 1-4 hours. More time the more tender it'll be
  • Prepare the grill at a medium high heat
  • After flipping chicken add more BBQ sauce on the top
  • Place the chicken on the grill and cook until it reaches a165-degrees internal temperature
  • Set aside and let rest for about 10 minutes before cutting
  • Assemble your salad and enjoy
