My two favorite things to eat are pizza and chicken Caesar salads. So, I decided to combine them both and get the best of both worlds! Did it make me happy? Yes, yes it did! Bringing my two favorite things together!

Spicy Peanut Butter Shrimp with Veggies

Equipment

  • Air fryer or oven
  • Sheet pan
  • Microwave

Ingredients

  • 1 Pound Shrimp Raw
  • Salt and peper to taste
  • 1 tsp Dak's Asian Zing
  • 1 1/2 TBSP Cornstarch
  • 2 Cups Steam N Bag Broccoli
  • 2 Cups Tatooed Chef cauliflower stir fry or plain cauliflower rice
  • Scallions to garnish

SAUCE

  • 1/2 Cup G Hughes Sweet Chili SF sauce
  • 2 TBSP PB Fit peanut butter powder
  • Splash Lime juice fresh

GARNISH

  • Cilantro or parsley to garnish
  • Sesame seeds to garnish

Instructions

  • Preheat air fryer to 390 degrees
  • While preheating the air fryer, place steam in bag broccoli into the microwave according to package directions
  • Either microwave cauliflower rice per directions on package or place into a small sauce pan and brown up
  • Place the shrimp onto a plate or sheet pan
  • Spray the shrimp with avocado oil then season with salt, pepper and Dak's Asian Zing seasoning or seasoning of choice.
  • Once done seasoning, sprinkle the corn starch all over the shrimp and let it sit for a few minutes
  • Once the air fryer is to temperature, spray both sides with cooking spray and place into the air fryer for 4-5 minutes
  • While shrimp is cooking place the chili sauce, peanut butter powder and lime juice into bowl and mix until combine
  • Once shrimp is cooked, toss into the chili sauce and serve with broccoil and cauliflower rice
  • Garnish with scallions, parsley and sesame seeds

Chicken Caesar salads is definitely my favorite salad.

I will eat it in a bowl, a wrap, on top of a pizza, you name it…

This is a chopped Caesar salad and its even better because you get everything in each bite.

This salad also uses one of my restaurant hacks using a zip top bag. Throw everything in, shake it up and pour right into a bowl.

Equipment

  • Large zip top bag or large Tupperware with lid
  • Small bowl
  • Knife

Ingredients

  • 4 oz Chicken breast or rotisserie chicken
  • Dak's Nothin But Ranch
  • Salt & Pepper to taste

SALAD INGREDIENTS

  • 3 Cups Romaine chopped
  • 1/2 Cup Cucumbers Chopped
  • 1/4 Cup Red onions Chopped
  • 2 TBSP Parmesan cheese
  • 28 each Good thins sea salt corn & rice snacks

DRESSING

  • 2 TBSP Non-Fat Greek Yogurt
  • 2 TBSP Bolthouse Farms Caesar Parmigiano Yogurt Dressing
  • Black pepper to taste

CHEESE BREAD

  • 2 Slices Eat Royo Artisian Bread or bread of your choice
  • Spray butter
  • 1/4 tsp Garlic salt
  • 20 grams Fat free mozzarella

Instructions

  • First make sure your chicken you cooked is cooled off before assembling.
  • Chop up the chicken, romaine, cucumbers and red onions. Place into a large zip top bag or large tupperware container
  • Add the parmesan cheese
  • In a small bowl mix up the Caesar dressing, yogurt and black pepper to taste. Pour into the bag.
  • Crush up half of the Good Thins, add to bag then shake bag or contained until everything is coated evenly
  • Pour out into a bowl, top with remained Good Thins (crushed) and top with cheese bread

CHEESE BREAD

  • Spray bread slices with butter, then sprinkle with garlic salt and mozzarella.
  • Place into an oven at 350 or an air fryer at 350 and bake until melted. A few minutes. If you spray the cheese with cooking spray, it'll help the melting process.

  • Small cast iron pan
  • Pizza roller

Ingredients

  • 5 oz. Skinny Pizza Dough recipe linked in notes
  • 1/4 Cup Roasted Garlic Yogurt Sauce Linked in notes
  • 1/2 Cup FF Mozzarella
  • 1/4 Cup Roasted or sauteed zucchini I seasoned with Dak's Nothin But Ranch
  • 1/4 Cup Steamed broccoli Chopped & Seasoned
  • 2 TBSP Roasted red peppers (In water) Chopped
  • 1/4 Cup Spinach Chopped & Seasoned
  • 1/4 Cup Sauteed mushrooms Seasoned with Dak's Nothin But Ranch
  • Avocado oil spray
  • Garlic salt to season crust & pizza
  • Oregano to season crust & pizza
  • 1/2 TBSO Parmesan cheese

Instructions

  • First make my Roasted Garlic Yogurt Sauce & Skinny Pizza Dough, Recipe is at Mybizzykitchen.com for Skinny Pizza Dough.
  • Roll out 5 ounces worth & pre heat oven to 400 degrees.
  • Smear 1/4 cup of the Roasted Garlic Yogurt sauce on the dough followed by the cheese & veggies.
  • Spray crust lightly with avocado oil spray and sprinkle the garlic salt over and the dried oregano.
  • Bake at 400 for about 10-12 minutes or until golden brown
  • Garnish with parmesan and enjoy
