Chef Allie's Pumpkin Apple Muffins

The most delicious healthier pumpkin muffin with an apple twist

Equipment

  • Mixing bowls
  • Standard muffin pan

Ingredients

Dry Ingredients

  • 1 1/4 Cup Flour
  • 1/2 Cup Monkfruit sweetener
  • 1 tsp Baking soda
  • 1 tsp Dak's Spices Pumpkin Spice seasoning
  • 1 tsp Cinnamon

Wet Ingredients

  • 1 Cup Crockpot Cinnamon Apples click HERE for recipe
  • 1 Cup Pure pumpkin puree
  • 2 Eggs
  • 1/4 Cup Water

Garnish

  • Spray butter

Sugar Topping

  • 3 TBSP Monkfruit sweetener
  • 1/2 tsp Dak's Spices pumpkin spice
  • 1/2 tsp Cinnamon

Instructions

  • Preheat oven to 350 degrees
  • In one bowl combine the dry ingredients and set aside
  • In a separate bowl combine the wet ingredients
  • Add the wet ingredients to the dry ingredients until combined
  • Spray the muffin pan well with cooking spray
  • Scoop out batter into the 12 muffin slots
  • Bake for 15-20 minutes
  • While muffins are baking, combine the sugar topping
  • Once the muffins are out, spray the tops with butter and sprinkle ths sugar on top
  • Let cool in pan for about 10 minutes before removing
