Chef Allie’s Pumpkin Apple Muffins
These muffins are so delicious and extremely easy to make. They are also kid friendly and make a great meal prep for the week. I actually prefer them cold right out of the fridge. Enjoy one muffin for 80 calories and only 1 WW or two for only 3 WW. Click HERE for WW points in the WW app.
Here is what you need:
- Mixing bowl
- Muffin pan
- Cooking spray
- Flour
- Monk fruit sweetener
- Cinnamon
- Dak’s Spices Pumpkin Spice seasoning
- Baking soda
- Salt
- My Crockpot Cinnamon Apples
- Pure pumpkin puree
- Native Vanilla bean paste or vanilla extract
- Eggs
- Spray butter
Here is how to make them:
- Preheat the oven to 350 degrees.
- In a bowl combine the flour, 1/2 cup Monkfruit sweetener, cinnamon, pumpkin spice, baking soda and salt. Mix until combined.
- In a separate bowl add my crockpot cinnamon apples, pumpkin puree, vanilla bean paste and eggs. Mix until combined.
- Add the wet ingredients to the dry ingredients.
- Spray the muffin pan well with cooking spray
- Add batter to the 12 muffin slots
- Bake for about 15-20 minutes or until toothpick comes out clean
- Take the 2 TBSP monk fruit sweetener, pinch of pumpkin spice and pinch of cinnamon and mix until combined.
- Spray the muffin tops with spray butter
- Sprinkle the sugar mixture on top of the muffins
- Enjoy!

- Mixing bowls
- Standard muffin pan
Ingredients
Dry Ingredients
- 1 1/4 Cup Flour
- 1/2 Cup Monkfruit sweetener
- 1 tsp Baking soda
- 1 tsp Dak's Spices Pumpkin Spice seasoning
- 1 tsp Cinnamon
Wet Ingredients
- 1 Cup Crockpot Cinnamon Apples click HERE for recipe
- 1 Cup Pure pumpkin puree
- 2 Eggs
- 1/4 Cup Water
Garnish
- Spray butter
Sugar Topping
- 3 TBSP Monkfruit sweetener
- 1/2 tsp Dak's Spices pumpkin spice
- 1/2 tsp Cinnamon
Instructions
- Preheat oven to 350 degrees
- In one bowl combine the dry ingredients and set aside
- In a separate bowl combine the wet ingredients
- Add the wet ingredients to the dry ingredients until combined
- Spray the muffin pan well with cooking spray
- Scoop out batter into the 12 muffin slots
- Bake for 15-20 minutes
- While muffins are baking, combine the sugar topping
- Once the muffins are out, spray the tops with butter and sprinkle ths sugar on top
- Let cool in pan for about 10 minutes before removing
