Pumpkin Protein Pancakes

Ingredients

  • 1/2 Cup Kodiak pancake mix
  • 1 tsp Baking powder
  • 1 Pinch Salt
  • 1/2 Cup Pure pumpkin puree NOT pumpkin pie filling
  • 1/4 tsp Native Vanilla bean paste Click HERE for Amazon link
  • 1/4 Cup Egg whites or one egg white
  • 1/4 tsp Dak's Spices pumpkin spice code CHEFALLIE at Dak's Spices
  • 1/4 tsp Cinnamon
  • 1/4-1/3 Cup Water

SUGAR TOPPING

  • 2 TBSP Monkfruit sweetener or sweetener of choice
  • 1 Pinch Dak's Spices pumpkin spice seasoning
  • 1 Pinch Cinnamon

GARNISH

  • 1/2 Cup Crockpot Cinamon Apples Click HERE for recipe
  • 2 TBSP Fat free Reddi Whip
  • Sugar free pancake syrup or syrup of choice

Instructions

  • Preheat the oven to 350 degrees
  • In a bowl combine the pancake mix, baking powder, salt, pumpkin puree, vanilla bean paste, egg whites, pumpkin spice, cinnamon and water.
  • Spray the muffin top pan with cooking spray and place muffin top pan onto a sheet pan
  • Divide the batter into 4 even portions
  • Sprinkle the sugar mixture on top of the batter
  • Bake for 15-20 minutes
  • Garnish with crockpot cinnamon apples, syrup and whipped cream

Notes

Serving size is 4 pancakes per serving or split into two servings
