Pumpkin Protein Pancakes


Have you tried my original Easy Protein Pancake recipe yet? Now, Iโm adding a new twist to my protein pancake collection with this pumpkin-flavored version! These pancakes are incredibly easy to make and absolutely delicious. Iโve topped mine with my delicious Crockpot Cinnamon Apples.ย
Here is what you will need:
- Silicone muffin top pan
- Sheet pan
- Mixing bowl
- Cooking spray
- Kodiak pancake mix or pancake mix of choice
- Baking powder
- Salt
- PURE pumpkin puree (not pumpkin pie filing)
- Native Vanilla bean paste or vanilla extract
- Liquid egg whites or one egg white
- Dakโs Spices pumpkin spice or pumpkin spice of choice
- Cinnamon
- Water
- Monk-fruit sweetener or sugar of choice
- My Crockpot Cinnamon Apples
- Fat free Reddi Whip
- Maple Grove sugar free pancake syrup or syrup of choice
Here is how to make it:
- Preheat the oven to 350 degrees.
- In a bowl combine the pancake mix, baking powder, salt, pumpkin puree, vanilla bean paste, egg whites, pumpkin spice seasoning, cinnamon and water.
- Spray the silicone mold with cooking spray.
- Divide pancake batter evenly into four portions.
- In a small bowl combine the monk fruit sweetener and a pinch of pumpkin spice and cinnamon.
- Sprinkle the sugar mix over the batter and bake for 15-20 minutes.
- While the pancakes are baking warm up my Crockpot Cinnamon Apples.
- Once pancakes are done, top with my Crockpot Cinnamonย Apples ,ย pancake syrup and some whipped cream.

Equipment

- Mixing bowl
Ingredients
- 1/2 Cup Kodiak pancake mix
- 1 tsp Baking powder
- 1 Pinch Salt
- 1/2 Cup Pure pumpkin puree NOT pumpkin pie filling
- 1/4 tsp Native Vanilla bean paste Click HERE for Amazon link
- 1/4 Cup Egg whites or one egg white
- 1/4 tsp Dak's Spices pumpkin spice code CHEFALLIE at Dak's Spices
- 1/4 tsp Cinnamon
- 1/4-1/3 Cup Water
SUGAR TOPPING
- 2 TBSP Monkfruit sweetener or sweetener of choice
- 1 Pinch Dak's Spices pumpkin spice seasoning
- 1 Pinch Cinnamon
GARNISH
- 1/2 Cup Crockpot Cinamon Apples Click HERE for recipe
- 2 TBSP Fat free Reddi Whip
- Sugar free pancake syrup or syrup of choice
Instructions
- Preheat the oven to 350 degrees
- In a bowl combine the pancake mix, baking powder, salt, pumpkin puree, vanilla bean paste, egg whites, pumpkin spice, cinnamon and water.
- Spray the muffin top pan with cooking spray and place muffin top pan onto a sheet pan
- Divide the batter into 4 even portions
- Sprinkle the sugar mixture on top of the batter
- Bake for 15-20 minutes
- Garnish with crockpot cinnamon apples, syrup and whipped cream
Notes
Serving size is 4 pancakes per serving or split into two servings
