A VERY EASY GRILLED SIDE DISH

Equipment
- Grill
- Grill pan
Ingredients
- 1 Eggplant ( Medium ) Cut 1 inch thick
- 3 Zucchini ( Small ) Cut 1 inch thick
- 2 Red onions ( Small ) Peeled & Cut 1 inch thick
- 3 Bell peppers Slice thick
- 2 Portobello Mushrooms Cut 1 inch slices
- Avocado oil spray
- Salt & Pepper To taste
- 1 TBSP Balsamic glaze Garnish
- 1/4 Cup Fresh parsley Chopped for garnish
Instructions
- Cut all of your vegetables up
- Spray with avocado oil
- Season with salt & pepper
- Grill until you have some nice grill marks
- Garnish with parsley & balsamic glaze
