Banana Muffins
A recipe i grew up making just lightened up
Servings: 12 Muffins
Equipment
- Muffin pan
- Mixing bowls
Ingredients
- 3 Bananas 2 to mash & 1 to chop to add to the batter
- 1/3 Cup Egg beaters or 2 eggs but points will change on WW green plan
- 1/4 Cup Non fat greek yogurt
- 1/2 Cup Sugar
- 1 1/4 Cup Flour
- 1 tsp Baking soda
- 1/2 tsp Baking powder
- 1/2 Cup Cashew mil or Almond milk
- 1 tsp Vanilla
- Pinch of salt
- 1/2 tsp Cinnamon
TOPPING
- 6 tsp Coconut sugar
Instructions
- Set oven to 350 degrees
- Spray muffin pan generously with cooking spray
- Mash the 2 bananas in a bowl and add everything else in ( besides chopped banana ) and let it sit for about 5 minutes
- Fold in the chopped banana and scoop 1/4 cup of the batter into each muffin slot
- Sprinkle the coconut sugar all over the tops of the muffins evenly
- Bake for 20-25 minutes or until toothpick comes out clean
- Let cool 10 minutes befre removing from pan
