Smashed Avocado Toast

Avocado toast is probably the most delicious breakfast and so easy to prepare. 

The creamy avocado mixed with silky yolk makes for a decadent breakfast.

My husband tried this for the first time every the other day and he was shocked at how amazing it was and said he will definitely be eating it again, 

Here is what you will need:

  • Low carb bread, I use Royo Bread Company (discount code below)
  • Avocados (Ripe)
  • Eggs
  • Seasonings, I use Dak’s Spices (see below)
  • Bowl
  • Toaster

Finding the perfectly ripe avocado is the best feeling. I like to buy the mini avocados because they usually equal about 2.5oz. and that is all I usually use for 2 slices of bread.

I take the perfect avocado and place it into a bowl and with a fork just mash up the avocado.

 

Here and the seasonings I like to use from Dak’s Spices.

Italian Blast has a little kick and I like a little kick to my avocado mash.

Green Zest is another favorite of mine that I like to add to my eggs.

Here is how to make it:

  1. First you are going to want to make your avocado mash for the toast
  2. Place the avocado into a small bowl, add your seasonings. 
  3. Season with salt and pepper to taste
  4. In a saute pan, add avocado oil
  5. Heat a non-stick pan to medium heat and crack eggs
  6. Seasoning the eggs with your choice of seasonings
  7. Once the eggs start to cook add about 1-2 tablespoons of water to the center of the eggs and cover the sauté pan with a lid
  8. Lower the heat and cook until whites are cooked all the way
  9. While the eggs finish cooking, toast your bread and add evenly put avocado mash onto the toast
  10. Top toast with eggs and enjoy

Ingredients

  • 2 Slices Eat Royo Company Artisan Bread or bread of choice

SMASHED AVOCADO

  • 2.5 oz. Avocado Ripe
  • Salt & pepper to taste
  • Dak's Italian blast or seasoning of choice

EGGS

  • 2 Eggs over medium
  • Dak's Green Zest seasoning or seasoning of choice
  • Dak's Original Red seasoning or seasoning of choice

Instructions

  • In a small bowl, take a fork and mash the avocado. Season with the salt, pepper and seasoning of choice to taste. Set aside
  • Add the avocado to your toasted bread
  • In a non-stick pan, add some avocado oil and heat pan on medium heat
  • Add eggs, season with your desired seasonings
  • Pour 1-2 tablespoons of water to the center of the eggs
  • Cover eggs with a lid and lower the heat
  • While the eggs finish cooking place bread into the toaster
  • Once bread is toasted, smear the avocado mash evenly between the two pieces of bread
  • Enjoy

Peach Ricotta Toast Two Ways

Peach season is here, and I am all for it. We got these beautiful peaches from a local farm called Tara Farms out in Litchfield, CT. The owner of this farm is coworkers with my husband and is so generous to bring us some amazing produce. 

The picture on the left is using New York bakery bread made from scratch and the picture on the right I used my favorite low carb bagels from Royo Bread. So, you can make this decadent with artisan bread or more carb friendly but still amazing. 

Here is what you will need:

  • Fresh peaches
  • Avocado oil spray
  • Cinnamon
  • Salt
  • Part skim ricotta
  • Vanilla bean paste or extact
  • Peach jam
  • Artisan bread, low carb bagels or bread of choice
  • Fresh basil
  • Honey

Look how beautiful and big these peaches are from Tara Farms. When I sliced them open and tried them, I was blown away at the flavor. You honestly need to but from a farm rather than a store. The quality is insanely better. 

I chose to use part skim ricotta cheese for less calories. I just jazzed it up for extra flavoring.

This isn’t necessary, but this Stonewall Kitchen Peach Jam took the flavor over the top. I was lucky enough to find this at Costco and I’m glad I decided to purchase it, because it’s delicious and only 30 calories per tablespoon.

My friends over at Pure Raw Honey make the most AMAZING honey and other honey products. This is a perfect garnish for this recipe.

Here is how to make it:

  1. Slice the peach in half, remove the pit and slice into slices.
  2. Spray a small sauce pan with avocado oil and add the peach slices into the pan
  3. Saute for just a few minutes and season peaches with a pinch of salt and cinnamon
  4. Remove peaches and set aside ones they are warmed up and slightly browned.
  5. While the peaches are cooling off, combine the ricotta cheese, vanilla, salt and peach jam
  6. Smear the ricotta evenly between the two slices of bread of bagel halves
  7. Top the toast or bagel halves with the peaches
  8. Garnish with a pinch of salt, honey and fresh basil
  9. Enjoy this amazing meal

  • Vanilla bean paste or extract
  • 1 tsp Peach jam
  • Pinch of salt

GARNISH

  • Honey
  • Fresh basil
  • Pinch of salt

Instructions

  • Slice the peach in half and remove the pit
  • Slice the peaches and place into a lightly greased saute pan
  • Saute for a few minutes
  • Season with a pinch of salt and cinnamon
  • Removed from heat
  • In a small bowl combine the ricotta spread ingredients
  • Place the ricotta spread onto your toast or bagel
  • Add the sauteed peached
  • Garnish with a pinch of salt, honey and fresh basil
  • Enjoy this summer treat!

Instructions

  • In a medium sauté pan, brown up the fully cooked chicken patty
  • While chicken patty is getting browned, season your egg whites to your liking
  • Once chicken is browned on both sides, pull off and set aside
  • In the same pan, pour in your seasoned egg whites and cook all the way through on low temperature
  • Fold eggs over into a half moon, then place cheese on one side and fold over the eggs one more time
  • Place on your toasted or non-toasted bagel and enjoy
