First roast your tomatoes and garlic. I had already had them done so I didn't need to do this step. Set oven to 400. Place tomatoes and garlic cloves on a parchment lined sheet pan. Spray lightly with avocado oil and season with salt, pepper and Italian seasoning
Now it's time to cook the pasta according to the package. While pasta is cooking reserve 2 cups of the pasta water right before you are about to strain
Set pasta aside
Slice up the chicken sausages and place into a pan lightly coated with cooking spray. Brown lightly
Add the spinach, tomatoes, garlic and pasta
Slowly add the pasta water to thicken up a sauce. A nice sauce will be created from the pasta water and the juices from the roasted tomatoes.
Season to taste with salt and pepper
Garnish with the fresh mozzarella and fresh basil
