Chocolate Chip Cookie Baked Oatmeal Bowl

 

Wouldn’t you love to enjoy a BIG chocolate chip cookie for breakfast? Well, you can plus, it’s HEALTHY! 

My Chocolate Chip Cookie Baked Oatmeal Bowl is only 5 WW, 412 Calories and has grams of 26.1 grams of protein in it. 

 

Here is what you need:

  • Uncooked quick oats
  • Frozen cauliflower rice
  • Unsweetened almond milk
  • Banana
  • Vanilla extract
  • Almond extract
  • Alani Nu Cinni Buns protein powder, or protein powder of choice
  • Salt
  • Lily’s no sugar added dark chocolate chips.
  • Coconut sugar
  • Sugar free pancake syrup or syrup of choice
  • Oven safe small baking dish
  • Cooking spray

Here are the quick oats I use from Aldi. They are cheap and they work perfectly!

 

As weird as it sounds, cauliflower rice works great in baked & blended oatmeal. You cannot taste and when mixed or blended with other ingredients, it takes on the taste of whatever you are mixing it with. 

I purchase my unsweetened almond milk from Costco. They sell it in the non-refrigerated section and is shelf-stable until opened. It’s great to have on hand and is cheaper than others!

Again, another wholesale club purchase. It’s cheaper and is the best bulk vanilla extract I’ve found so far. 

You can certainly buy this in the grocery stores, but if you cannot find it, click HERE and grab it from Amazon.

Any lower point and lower calories protein powder will work. This one i personally love for its flavoring.

This is my favorite coconut sugar, and you can have an entire teaspoon of this brand for ZERO WW points. I find mine at Shop Rite stores. 

Here is how to make it:

  1. Preheat oven to 400 degrees.
  2. In the blender add the oatmeal ingredients and blend until smooth.
  3. Pour into a greased oven safe dish.
  4. Take half the chocolate chips and swirl into the batter.
  5. Take remaining chocolate chips on top of the batter.
  6. Sprinkle the coconut sugar on top. 
  7. Bake for 15-20 minutes.
  8. Garnish with syrup and more unsweetened almond milk
  9. Enjoy!

Ingredients

OATMEAL BASE

  • 1/2 Cup Unsweetened almond milk
  • 1/2 Cup Uncooked quick oats
  • 1/2 Cup Frozen cauliflower rice
  • 1/2 Banana
  • 1 Scoop Protein powder I used Alani Nu Cinni Buns
  • 1 tsp Baking powder
  • 1/4 tsp Dak's Chocolate Crave or cinnamon, code CHEFALLIE at Dak's Spices
  • 1/4 tsp Vanilla extract
  • 1/8 tsp Almond extract
  • 1 Pinch Salt

MIX-IN/TOPPING

  • 16 each Lily's no sugar dark chocolate chips
  • 1 tsp Coconut sugar

GARNISH

  • Sugar free pancake syrup

Instructions

  • Preheat the oven to 400 degrees.
  • Add the oatmeal ingredients to the blender and blend until smooth.
  • Pour batter into a greased oven safe dish!
  • Take half of the chocolate chips and place into the batter and swirl into it

  • Sprinkle the top with the coconut sugar
