Broccoli and Cheese Egg Bites

Need an easy and delicious breakfast idea? Then you need to make these egg bites.

They turned out WAY better than what you can buy in the store. 

If you want a meal prep for the week, these reheat great. Just pop them into the microwave for less than a minute and you are good to go.

You can have 1 or 2 egg bites for ONLY 1 WW

1 egg bite has 97 calories and 12 grams of protein. 

Here is what you need:

  • Food processor or blender
  • Instant pot
  • Instant pot egg mold
  • Water
  • Instant pot trivet
  • Foil
  • Cooking spray
  • Eggs (whole)
  • Good Culture 2% cottage cheese
  • Unsweetened almond milk
  • Salt
  • Pepper
  • Dak’s Spices Green Zest, or seasoning of choice
  • Cooked broccoli
  • Kraft fat free cheddar cheese
  • Kraft fat free mozzarella cheese

Here is how to make it:

  1. Place the eggs, almond milk, cottage cheese, salt, pepper and Dak’s Seasoning into the blender
  2. Blend until smooth
  3. Spray the egg mold with cooking spray
  4. Place the chopped broccoli in the bottom of the molds
  5. Pour the egg batter over the broccoli
  6. Sprinkle the cheese on top once all full of egg mixture
  7. Take some water and pour 1 cup onto the bottom of the instant pot
  8. Place the trivet under the mold and cover the mold with foil
  9. Place trivet and with mold into the instant pot
  10. Cover and set to steam for 8 minutes
  11. Once the 8 minutes are up, let naturally release for 10 mintues
  12. Once done, remove and enjoy

Ingredients

  • 5 Eggs
  • 1/4 Cup Unsweetened almond milk
  • 1/2 Cup Good Culture 2% cottage cheese or brand of choice
  • Salt
  • Pepper
  • Dak's Spices Green Zest or seasoning of choice
  • 1 Cup Cooked broccoli Chopped
  • 1/4 Cup Kraft fat free cheddar cheese
  • 1/4 Cup Kraft fat free mozzarella cheese

Instructions

  • In the food processor or blender add the eggs, almond milk, cottage cheese, salt, pepper and Dak's Green Zest (or seasoning of choice).
  • Blend until smooth.
  • Spray the egg mold with cooking spray.
  • Take the chopped broccoli and add to the bottom of the egg mold.
  • Pour the egg batter into the molds.
  • Sprinkle the cheese on top of the egg batter .
  • Place the egg mold onto the trivet and cover mold with foil.
  • Pour 1 cup of water to the bottom of the instant pot.
  • Place the trivet and egg mold into the instant pot.
  • Close lid and set to steam for 8 minutes.
  • Once 8 minutes is done, naturally release for 10 minutes then remove egg bites.

Recipe makes 7 egg bites
