Blueberry Muffin Baked Oatmeal Bowl

This Blueberry Muffin Baked Oatmeal Bowl tastes just like a MASSIVE blueberry muffin. 

The ENTIRE bowl is ONLY 5 WW and 422 calories.

This is by far one of my favorites. 

Here is what you need:

  • Nutribullet or blender
  • Oven save one quart baking dish
  • Cooking spray
  • Oven
  • Unsweetened almond milk
  • Quick oats
  • Cauliflower rice
  • Banana
  • Sweat Ethic Vanilla Ice Cream protein powder, or powder of choice
  • Vanilla extract
  • Baking powder
  • Salt
  • Lemon zest
  • Fresh blueberries
  • Confectioners sugar substitute
  • Water

When using this, it is optional so you do not HAVE to add it. But, it bulks up and adds veggies without messing with the flavors since cauliflower takes on the flavor it is cooked or baked with.

You can certainly use regular confectioners’ sugar, but the points and calories will change. 

Here is how to make it:

  1. Preheat the oven to 400 degrees.
  2. In the blender add the oatmeal base ingredients.
  3. Blend until smooth, not too long.
  4. Spray the oven-safe baking dish with cooking spray.
  5. Pour the batter into the dish.
  6. Mix in the fresh blueberries into the batter.
  7. Sprinkle the coconut sugar over the batter.
  8. Bake for 20-25 minutes.
  9. While baking, take the confectioners sugar substitute with unsweetened almond milk until glaze consistency.
  10. Once oatmeal is done, drizzle glaze over the baked oatmeal.
  11. Let sit for 5-10 minutes before eating.

Ingredients

OATMEAL BASE

  • 1/2 Cup Unsweetened almond milk
  • 1/2 Cup Quick oats
  • 1/2 Cup Cauliflower rice Optional
  • 1/2 Banana
  • 1 Scoop Sweat Ethic vanila ice cream protein powder or protein powder of choice
  • 1/4 tsp Vanilla extract
  • 1 tsp Lemon zest
  • 1 tsp Baking powder
  • 1 Pinch Salt

MIX-IN

  • Fresh Blueberries

TOPPING

  • 1 tsp Coconut sugar

GARNISH

  • 1/4 Cup Confectioners' sugar substitute
  • 1/2 TBSP- 1 TBSP Unsweetened almond milk

Instructions

  • Preheat the oven to 400 degrees
  • In the blender add all of the oatmeal base ingredients and blend until smooth (Not too long)
  • Spray the oven safe baking dish with cooking spray
  • Pour the oatmeal batter into the dish
  • Take the fresh blueberries, mix into the batter
  • Sprinkle the coconut sugar on top of the batter
  • Bake for 20-25 minutes
  • While baking, take the confectioners sugar substitute and the unsweetened almond milk and add slowly until a nice glaze consistency is formed.
  • Once the oatmeal is done, drizzle the glaze and let sit for about 5-10 minutes before serving.
  • Enjoy
