Chicken Caesar Protein Pasta Salad
Equipment
- 2 Large mixing bowl
- Knife
- Cutting board
- Grater or zester
- Pot to cook pasta
Ingredients
- 1 Box Barilla Protein+ Rotini Pasta or pasta of your choice
- 20 ounces Cooked chicken, chopped I use a rotisserie chicken
- 300 grams Bolthouse Caesar dressing or 1 cup
- 330 grams Whipped cottage cheese see directions
- 1/2 cup Nonfat Greek yogurt
- 40 grams Grated parmesan cheese
- 60 grams Shaved parmesan cheese
- 6 Cups Romaine Chopped
- 1/2 TBSP Dried oregano
- 1 tsp Onion powder
- 2-3 Garlic cloves grated
- Salt to taste
- Black pepper to taste
Instructions
WHIPPED COTTAGE CHEESE
- In a food processor or mini blender, add the cottage cheese and blend until a smooth whipped consistency. set aside.
PASTA SALAD PREP
- Cook the pasta according to the instructions
- Rinse with cold water to stop the cooking process
- Once cooled off place into a large mixing bowl
- Chop the chicken into small pieces and add to the bowl
- Add the remaining ingredients besides the romaine
- Once ready to serve, add the lettuce or add the lettuce per serving to prevent the lettuce from getting soggy
