Golden Cottage Cheese Oat Waffles

Golden Cottage Cheese Oat Waffles

Fluffy, Gluten-Free & Freezer-Friendly

If you’re looking for waffles that are crispy and golden on the outside, soft and fluffy on the inside, and made with wholesome ingredients, these Golden Cottage Cheese Oat Waffles are about to become your new favorite breakfast.

Made with blended oats, cottage cheese, and eggs, they’re naturally gluten-free (when using certified gluten-free oats), packed with protein, and perfect for meal prep. The best part? They freeze beautifully! Make a batch over the weekend, freeze the extras, and you’ll have a delicious breakfast ready in minutes all week long.

The secret to these waffles is straining the cottage cheese before blending. Removing the extra moisture creates a thicker batter, giving you waffles that cook up beautifully golden with a soft, fluffy center.

Protein Drizzle

Take Them to the Next Level with a Protein Drizzle

If you really want to elevate these waffles, don’t skip the protein drizzle! It adds an extra boost of protein while taking the flavor to a whole new level. For these waffles, I mixed 1st Phorm Blueberry Muffin protein powder with just enough water until it reached a smooth, drizzle-like consistency, then poured it right over the top. The blueberry flavor pairs perfectly with the waffles, but that’s the best partโ€”you can switch it up every time! From Birthday Cake and Cinnamon Cookie Batter to Vanilla Milkshake or Chocolate flavors, there are so many delicious options to create a whole new breakfast experience while adding even more protein.

Why These Ingredients Are Great

Cottage Cheese

  • A great source of high-quality protein to help keep you full longer.
  • Rich in calcium to support strong bones.
  • Straining the cottage cheese removes excess moisture, resulting in fluffier, more golden waffles.

Oats

  • Provide complex carbohydrates for long-lasting energy.
  • Naturally rich in fiber to support digestion and help keep you satisfied.
  • Naturally gluten-free when using certified gluten-free oats.
  • Blending them into oat flour creates a soft, tender texture without using refined flour.

Eggs

  • Add complete protein and healthy fats.
  • Help bind the batter together.
  • Contribute to the fluffy texture and beautiful golden color.

Egg Whites

  • Add lean protein without additional fat.
  • Help create a light, airy texture.

Baking Soda

  • Helps the waffles rise.
  • Creates a light, fluffy interior and crisp exterior.

Sugar-Free Instant Pudding Mix

  • Adds a hint of vanilla flavor.
  • Helps create a softer texture while keeping the waffles moist.

Vanilla & Almond Extract

  • Give these waffles a warm, bakery-style flavor.
  • Add depth and sweetness without adding sugar.

Cinnamon

  • Adds cozy flavor and warmth.
  • Pairs perfectly with oats and vanilla.

Salt

  • Enhances every flavor in the recipe and balances the sweetness.

Meal Prep & Storage

Refrigerator

Store cooled waffles in an airtight container in the refrigerator for up to 4 days.

Freezer

Once the waffles have cooled completely, place them in a freezer-safe bag or container with parchment paper between each waffle to prevent sticking.

Freeze for up to 3 months.

To reheat, simply pop them into the toaster, toaster oven, air fryer, or oven until warmed through and crispy.

Chef Allie’s Tips

  • Don’t skip straining the cottage cheese! It’s the secret to a thicker batter and fluffier waffles.
  • Let the batter rest for about 5 minutes before cooking so the oat flour can absorb the moisture.
  • Wait until the steam slows before opening your waffle maker to help achieve that perfectly golden, crispy exterior.
  • Double the recipe and freeze extras for quick, grab-and-go breakfasts.

Delicious Topping Ideas

  • Fresh berries
  • Banana slices
  • Greek yogurt
  • Peanut butter or almond butter
  • Sugar-free maple syrup
  • Honey
  • Cinnamon
  • Chopped nuts
  • A dollop of whipped cottage cheese

Whether you’re meal prepping for a busy week, fueling up after a workout, or serving breakfast to the whole family, these waffles deliver on both flavor and nutrition.
