Ingredients
WET INGREDIENTS
- 1/2 Banana
- 1 Whole egg
- 2 TBSP Egg whites
- 1/2 Scoop 1st Phorm CTC (Cinnamon Toast Crunch) protein powder Grab HERE
- 3 TBSP Nonfat Greek yogurt I used ALDI brand
- 1 tsp Zest of a lemon
- 1 TBSP Unsweetened almond milk I used ALDI brand
- 1 Splash Vanilla extract
DRY INGREDIENTS
- 3 TBSP Kodiak pancake mix
- 2 tsp Simply Delish sugar free lemon instant pudding mix
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1 pinch Salt
- 1 Dash Cinnamon
ADD IN
- 1/3 cup Chef Allie's Blueberry or Berry sauce Get recipe HERE
- 1 tsp Olive oil or avocado oil
TOPPINGS
- Sugar free pancake syrup
Instructions
- Spray the microwave safe dish with cooking spray
- Mash the banana on the bottom of the dish
- Add the wet ingredients and mix until combined
- Add the dry ingredients and mix until combined, do not overmix
- Add the blueberry/berry sauce on top of the batter in sections and swirl into the batter
- Drizzle the olive oil on top and do another quick swirl
- Place container into the microwave for 1 minute
- Continue with 30 second intervals until the center is the slightest jiggly
- Let it sit for 2-3 minutes
- Drizzle with some syrup and enjoy
