Basil & Spinach Pesto
Who doesn't love pesto? Its such a wonderful thing! The only thing i dont enjoy is the amount of oil and nuts that are usually in a standard pesto recipe. So i made a nice lightened version with some veggies snuck in for good measure!
Equipment
- Food processor
Ingredients
- 3 Cups Fresh Basil
- 8 Ounces Fresh Spinach
- 1/4 Cup Walnuts
- 1/4 Cup Minced garlic
- Zest of one lemon
- Juice on one lemon
- 1 tsp Avocado oil
- 1 Oune Freshly grated parmesan cheese
- Salt and pepper to taste
Instructions
- Combine everything into a food processor or blender and season with salt and pepper to taste
