Berry Stuffed French Toast

When I tell you this is healthy would you believe me? Well, you should!

My mission on my weight-loss journey was to continue to enjoy eating food and not make it boring.

Here is what you need:

  • Low carb bread, I use Royo Bread Co. order HERE with discount
  • Eggs, egg whites or egg substitute
  • Unsweetened almond milk
  • Vanilla extract
  • Cinnamon
  • Salt
  • Nonfat Greek yogurt
  • Simply Delish vanilla pudding mix
  • My Berry Sauce
  • Spray butter (optional)
  • Fat free Reddi Whip
  • Sugar free pancake syrup
  • Dak’s Chocolate Crave

Any eggs will do, or you can use egg whites or egg substitutes as well. I personally LOVE Nellie’s brand. 

This is the ONLY unsweetened almond milk I buy. It is shelf safe when bought (until opened) and is low in calories and points.

French toast wouldn’t be French toast without cinnamon.

And LOTS of vanilla extract. I buy this one at the wholesale clubs (Costco)

This is the sugar free pancake syrup I’ve used the most throughout my journey. You don’t have to use sugar free pancake syrup or any syrup. But I love this one. You could use REAL maple, but the points will change. 

Here is how to make it:

  1. In a bowl combine the egg, unsweetened almond milk, vanilla, cinnamon and salt. Set aside.
  2. Get a nonstick pan onto medium heat
  3. While pan is heating up, combine the nonfat Greek yogurt, pudding mix and a little of my berry sauce. Set aside.
  4. Once pan is hot and ready, Dip each piece of bread (one at a time) and place into the lightly greased pan
  5. Brown both sides
  6. Once done, Layer the French toast with the filling
  7. Garnish with my berry sauce, whipped cream, Dak’s Chocolate Crave/Cinnamon and pancake syrup
  8. Enjoy!

  • Nonstick pan
  • Mixing bowls
  • Whisk or fork

Ingredients

  • 3 Royo Bread Co. Artisan Bread slices or low carb bread of choice

FRENCH TOAST BATTER

  • 1 whole Egg or 1/4 cup egg whites/egg sub
  • 1/4 Cup Unsweetened almond milk
  • 1/4 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1 Pinch salt

FILLING

  • 1/2 Cup Nonfat greek yogurt
  • 1 tsp Simply Delish vanilla pudding mix
  • 1 TBSP My Berry Sauce click HERE for recipe

GARNISH

  • 1/3 Cup My Berry Sauce click HERE for recipe
  • 2 TBSP Fat free Reddi Whip
  • 3 TBSP Sugar free pancake syrup
  • Dak's Chocolate Crave seasoning or cinnamon

Instructions

  • In a bowl combine the French toast batter and set aside
  • Place nonstick pan on the burner on medium heat
  • While pan is heating up, combine the filling and set aside
  • Dunk the bread into the batter, one at a time and place into the lightly greased pan
  • Brown both sides
  • Once done, take each slice of French toast and later with the filling
  • Once done filling, garnish with berry sauce, whipped cream, syrup and cinnamon.
  • Enjoy
