Brownie Batter Baked Oatmeal Bowl
This Brownie Batter Baked Oatmeal Bowl was like eating a warm ooey gooey brownie for breakfast and it was AWESOME!
What really took this one over the top was the Sweat Ethic Brownie Milkshake protein powder.

Here is what you need:
- Mini food processor or blender
- Quick oats
- Unsweetened almond milk
- Frozen cauliflower rice
- Vanilla extract
- Sweat Ethic Brownie Milkshake protein powder
- OR PROTEIN POWDER OF CHOICE
- Banana
- Baking powder
- Salt
- Cocoa powder
- Instant espresso
- Lily’s no sugar added dark chocolate chips.
- Coconut sugar
- Sugar free pancake syrup, or syrup of choice
Quick oats are the best thing for baked oatmeal bowls. I grab mine from Aldi because they are the cheapest.
When I buy unsweetened almond milk, I buy this one from Costco. This is shelf stable until opened and it is a great item to have on hand.
When purchasing vanilla extract, I grab mine from the wholesale club stores.

Cauliflower rice is a GREAT thing to add to these bowls. It is a bulk item, an added veggie and it always takes on the flavor of what you are using it in so it will not overpower the flavor AT ALL.
Something we always have on hand is baking powder and bananas.

This is totally optional, but I love adding this on top of the oatmeal after it is cooked.
Brownie Batter Baked Oatmeal Bowl
Equipment
- 1 Mini food processor or blender HERE is the one I use
- 1 Oven safe 1 quart baking dish
Ingredients
OATMEAL BATTER BASE
- 1/2 Cup Unsweetened almond milk
- 1/2 Cup Quick oats
- 1/2 Cup Frozen cauliflower rice
- 1/2 Banana
- 1 tsp Baking powder
- 1 Scoop Sweat Ethic Brownie Milkshake protein powder
- 1/8 tsp Vanilla extract
- 1/2 TBSP Instant espresso
- 1/2 TBSP Cocoa powder
- 1/4 tsp Dak's Chocolate Crave seasoning or Cinnamon
CENTER FILLING
- 1/2 TBSP Simply Delish sugar free chocolate pudding mix
- 1/2 TBSP Simply Delish sugar free vanilla pudding mix
- 1/4 Cup Unsweetened almond milk
- 7 each Lily's dark chocolate sugar free chips
GARNISH
- 7 each Lily's dark chocolate sugar free chips
- 1 tsp Coconut sugar
Instructions
- Preheat oven to 400 degrees.
- In a small bowl combine the sugar free puddings and slowly add the unsweetened almond milk until thick. Place to the side until ready to use.
- In the food processor or blender add all of the oatmeal batter base ingredients
- Blend until smooth
- Pour batter into a greased oven safe baking dish (I use a 1 quart size)
- Take half of the chocolate chips and mix into the batter.
- Take the pudding and add to the center of the oatmeal batter.
- Take the remaining chocolate chips and place on top of the batter followed by the coconut sugar.
- Place into the oven for about 20 minutes
- Garnish with some pancake syrup or eat as is and enjoy
