Buffalo Chicken Pita Pizzas
I am a mom of 3, and for the most part my days are very busy and tiring. So, when I do not want to spend a lot of time in the kitchen, I make some sort of pita pizza. Buffalo chicken is one of my recipes I like to use.
This takes just a few minutes to put together and only 5 WW, 512 calories and 71.2 grams of protein. These pita pizzas are extremely filling and delicious.
Here is what you need:
- Sheet pan
- Chicken Breast
- Hot sauce
- Onion powder
- Garlic powder
- Salt
- Pepper
- Hidden Valley ranch seasoning
- Dak’s Green Zest
- Joseph pita bread
- Avocado oil spray
- Fat free cheddar cheese
- Bolthouse blue cheese dressing
- Non-fat Greek yogurt
- Red onions (optional)
- Tomatoes (optional)
- Scallions, to garnish
Here are the pita breads that I buy. You can also find the Aldi brand for less money and same thing. Only 60 calories a pita.
You can use any hot sauce you’d like but this is my favorite brand out of them all.

Both the garlic powder and onion powder are usually ALWAYS in everything I cook.
Mixing the non-fat Greek yogurt with the Bolthouse Farms dressings maximizes the amount without messing with the flavors.
Our kids LOVE the Ranch and I love using the Chunky Blue Cheese with anything spicey.
Here is how to make it:
- Place the hot sauce on the bottom of the crockpot followed by the chicken breast.
- Season with salt, pepper, garlic powder, onion powder, Hidden Valley ranch seasoning and Dak’s Green Zest (optional)
- Set to low for 6-8 hours or high for 4.
- If you’d like, just use rotisserie chicken and mix with above hot sauce and seasonings.
- Once chicken is ready to use preheat oven to 400 degrees
- Put some parchment paper onto a sheet tray.
- Add the pitas onto the tray.
- Spray the pitas with avocado oil or cooking spray.
- Sprinkle some garlic powder, onion powder and more Dak’s Green Zest over the pitas.
- Place into the oven for about 3-4 minutes, enough to lightly crisp up.
- Take the cheese and rinse under water to remove the caking agent. This helps the fat free cheese to melt better.
- Sprinkle half the cheese amongst the two pitas.
- Distribute the 5 oz. of buffalo chicken to the two pitas followed by the remaining cheese.
- Place into the oven and bake until cheese is melted, and the pitas are nice and crispy all around.
- Add the diced tomatoes, diced red onions, scallions and garnish with the dressing.
- Enjoy!

Equipment
- Sheet pan
- Parchment paper
- Crockpot optional
Ingredients
CROCKPOT BUFFALO CHICKEN
- 1- 1 1/2 pounds Chicken breast
- 1/2 Cup Frank's hot sauce
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1 tsp Dak's Green Zest optional
- Salt & pepper to taste
PIZZA INGREDIENTS
- 2 Joseph Pita breads or Aldi brand
- Avocado oil spray
- 1/4 tsp Garlic powder to taste
- 1/4 tsp Onion powder to taste
- 1/4 tsp Dak's Green Zest optional
- 1/2 Cup Kraft fat free cheddar cheese rinsed, helps melt.
- 5 oz. Crockpot buffalo chicken
GARNISH
- 1/4 Cup Tomato diced
- 2 TBSP Red onion diced
- 2 TBSP Scallions Chopped
DRESSING
- 2 TBSP Bolthouse Blue Cheese dressing
- 2 TBSP Non-fat Greek yogurt
Instructions
CROCKPOT BUFFALO CHICKEN
- In the crockpot, add the hot sauce on the bottom follower by the chicken breast and seasonings. **You can also skip this step and use cooked chicken or rotisserie chicken seasoned with same ingredients used for the crockpot version**
- Set to low for 6-8 hours or high for 4 hours
- Once done, shred and place back in on keep warm setting or remove until ready to use.
DRESSING
- Take the blue cheese dressing and the yogurt and mix up until combine. Set aside until ready to use.
PITA PIZZA
- Preheat oven to 400 degrees
- On a sheet tray place the parchment paper down then the pitas
- Spray the pitas with cooking spray or avocado oil spray.
- Season the pitas with garlic powder, onion powder and Dak's Green Zest (optional)
- Place into the oven for about 3 minutes and remove. Just enough to lightly crisp up.
- Take the cheese and rinse until water to remove the caking agent (helps with melting fat free cheeses).
- Sprinkle half of the cheese between the two pitas
- Add the buffalo chicken on top followed by the remaining cheese.
- Place back into the oven until cheese is melted and crispier edges.
- Garnish with the diced tomatoes, diced red onions, scallions and dressing
- ENJOY!
