Chocolate Berry Baked Oatmeal Bowl

If you are like me, I LOVE chocolate and berries together. They just work so well together.

This ENTIRE bowl is 5 WW points and only 422 calories.

The flavors were excellent, and I HIGHLY recommend this recipe.

Here is what you will need:

 

  • Oven
  • Oven-safe vessel
  • Blender or mini food processor
  • Quick oats
  • Unsweetened almond milk 
  • Baking powder
  • Unsweetened Cocoa powder
  • Instant espresso powder
  • Salt
  • Banana or one egg
  • Frozen cauliflower rice
  • Protein powder (optional)
  • Vanilla extract
  • Dak’s Spices Chocolate Crave
  • My BERRY SAUCE

 

Here is the Nutribullet blender I use. You can grab one HERE.

If you do not want to use cauliflower rice that is ok. But you CANNOT taste it. Cauliflower rice takes on the flavor of whatever it is being cooked or baked with.

When you add espresso powder to chocolate, it enhances the chocolate flavor.

Always a pinch of salt.

Baking powder to help it rise. 

 

This is the only sugar I use for the topping of my oatmeal bowls and my coffees. 

       

HERE is my BERRY SAUCE, I use this for so many things and it is just DELICIOUS!

Equipment

  • 1 Blender or mini food processor
  • 1 One quart oven safe baking dish

Ingredients

OATMEAL BASE

  • 1/2 Cup Quick oats
  • 1/2 Cup Unsweetened almond milk
  • 1 tsp Baking powder
  • 1/2 TBSP Unsweetened cocoa powder
  • 1 tsp Instant espresso powder
  • 1 Pinch Salt
  • 1/2 Banana
  • 1/2 Cup Frozen cauliflower rice
  • 1 Scoop Sweat Ethic Brownie Batter protein powder or protein of choice
  • 1/4 tsp Vanilla extract
  • 1/8 tsp Dak's Spices Chocolate Crave or cinnamon

FILLING

  • 1/4 Cup My BERRY SAUCE Recipe HERE

TOPPING

  • 1 tsp Coconut sugar

GARNISH

  • Pancake syrup optional

Instructions

  • Preheat oven to 400 degress
  • In the food processor add all of the oatmeal batter ingredients
  • Blend until smooth
  • Pour into a greased oven safe dish
  • Take my BERRY SAUCE and place into the center of the batter
  • Sprinkle the coconut sugar on top
  • Bake for 20-25 minutes
  • Garnish with syrup and enjoy
