Chicken Caesar Salad Pizza

My two favorite things to eat are pizza and chicken Caesar salads. So, I decided to combine them both and get the best of both worlds!

Chicken Caesar Salad Pizza

Equipment

  • Pizza roller
  • Small cast iron pan

Materials

  • 6 oz My Bizzy Kitchen Pizza Dough recipe linked in notes
  • 1/3 Cup low fat cottage cheese, whipped. See instructions
  • 1/4 tsp Garlic powder
  • 3 oz Cooked chicken or rotisserie
  • 2 TBSP Red onion Chopped
  • 1/2 Cup Fat free mozzarella
  • 2 Cupa Romaine Chopped
  • 2 TBSP Bolthouse Casear
  • 2 TBSP non fat greek yogurt
  • 1 tsp Grated parmesan cheese
  • Salt & Pepper to taste

Instructions

  • In a mini food processor or blender add the cottage cheese and garlic powder to the blender. season to taste with salt and pepper. Once all whipped set aside
  • Preheat oven to 420
  • In a small cast iron roll out dough
  • Place the whipped cottage cheese onto the dough followed by the cheese, chicken and red onions
  • Place into the oven until golden brown, about 10-15 minutes
  • While pizza is in the oven, place the romaine, dressing parmesan cheese into a bowl. Mix until combine and set aside or into the fridge until pizza is done.
  • Once pizza is done cue and add the Caesar salad on top of the pizza and enjoy

Equipment

  • Air fryer optional
  • Oven
  • Mixing bowl

Ingredients

BBQ Chicken

  • 1 Chicken breast Raw
  • 1 tsp Dak's BBQueen seasoning Or dry BBQ seasoning
  • 1 tsp Dak's Nothin But Ranch seasoning Ranch seasoning
  • Salt & Pepper to taste
  • 1/4 Cup Sugar free BBQ sauce Sweet Baby Rays or GHughes

Dressing

  • 3 TBSP Sugar free BBQ sauce GHughes or Sweet Baby Ray's
  • 2 TBSP Non fat greek yogurt
  • 2 TBSP Bolthouse Classic Ranch Dressing

Salad Add Ons

  • 2-3 Cups Romaine Chopped
  • 1/4 Cup Corn
  • 1/4 Cup Black beans Drained & Rinsed
  • 1/4 Cup Grape tomatoes Halved
  • 1/4 Cup Red onions Sliced thin
  • 1/4 Cup Mini cucumbers Sliced
  • 1/4 Cup FF Cheddar Cheese I used Kraft brand
  • 15 each Good Thins Jalapeno Lime Corn & Rice Crackers Crushed
  • Lime wedges

Avocados

  • Avocado Chunked
  • Fresh cilantro
  • Splash of lime juice
  • Salt & Pepper to taste

Garnish

  • 1-2 TBSP Sugar free BBQ Sauce GHughes
  • Cilantro Optional

Instructions

  • In a bowl mix ingredient for the dressing and place into the refrigerator until ready to use.
  • In a zip-top bag or bowl place the chicken breast inside with the BBQ chicken ingredients. Massage into and around chicken breast. Let marinade for about 30 minutes.
  • Once done marinading let chicken come to room temperature.
  • Set air fryer to 400 degrees. Spray air fryer basket or tray with cooking spray. Place chicken breast on and air fry for about 15 minutes or until internal temperature reaches 165. Let rest before slicing.
  • While chicken is cooking assemble salad
  • Top the salad with the sliced chicken and some more BBQ sauce & dressing mixed in or on the side.

Ingredients

  • 1/2 Cup Israeli couscous
  • Water For cooking couscous, follow directions on box for water needed. Some may be different
  • 1 tsp Knorr chicken bouillon flavoring
  • 1 Ear of corn or canned charred
  • 46 Grams Avocado chopped
  • 1/2 Pint Grape tomatoes halved
  • 2 oz. Fresh mozzarella pearls Whole or halved
  • 2 tsp Balsamic vinegar
  • 2 TBSP Bolthouse Farms lemon basil yogurt dressing
  • 1/4 Cup Fresh basil Chopped
  • Salt & Pepper to taste

Instructions

  • First follow directions for the couscous , mine was bring the water to a boil then add the couscous. I also added the knorr chicken bouillon flavoring once I added the couscous. Once done set aside and with a fork break up the chunks lightly.
  • While to couscous was cooking, char the corn. All I did was place the corn in a pan and saute until charred. Season with salt and pepper to taste. Set aside to cool.
  • Once couscous and corn are cooled off place in a large bowl
  • Add remaining ingredients, balsamic vinegar, dressing and season with salt and pepper to taste.
  • You can serve warm/room temperature or chill it in the refrigerator for later
