Ingredients

CHEESECAKE BATTER

  • 4 ounces Light cream cheese room temperature
  • 1/2 cup Nonfat Greek yogurt room temperature
  • 1 Egg room temperature
  • 50 grams Clean Simple Eats Strawberry Cheesecake protein powder code CHEFALLIE
  • 1 tsp Vanilla extract
  • Juice of half a lemon
  • 3 TBSP Sugar free pancake syrup
  • 1 Pinch Salt

TOPPINGS (OPTIONAL)

  • Crockpot cinnamon apples recipe HERE

Instructions

  • Preheat the oven to 375 degrees
  • In a mixing bowl add all of the cheesecake batter ingredients
  • Mix well with a whisk or an electric hand mixer until smooth and creamy
  • Line the jumbo cupcake pan with 5 cupcake liners
  • Spray liners lightly with cooking spray
  • Pour batter evenly into all 5 cupcake liners
  • Place the cupcake pan into a sheet pan with water poured into the sheet pan
  • Place into the oven for 20-22 minutes
  • Let cool enough to remove and place on a wire rack
  • Place into the fridge for a few hours or overnight to set and cool
