Spicy Peanut Butter Shrimp with Veggies

Equipment

  • Air fryer or oven
  • Sheet pan
  • Microwave

Ingredients

  • 1 Pound Shrimp Raw
  • Salt and peper to taste
  • 1 tsp Dak's Asian Zing
  • 1 1/2 TBSP Cornstarch
  • 2 Cups Steam N Bag Broccoli
  • 2 Cups Tatooed Chef cauliflower stir fry or plain cauliflower rice
  • Scallions to garnish

SAUCE

  • 1/2 Cup G Hughes Sweet Chili SF sauce
  • 2 TBSP PB Fit peanut butter powder
  • Splash Lime juice fresh

GARNISH

  • Cilantro or parsley to garnish
  • Sesame seeds to garnish

Instructions

  • Preheat air fryer to 390 degrees
  • While preheating the air fryer, place steam in bag broccoli into the microwave according to package directions
  • Either microwave cauliflower rice per directions on package or place into a small sauce pan and brown up
  • Place the shrimp onto a plate or sheet pan
  • Spray the shrimp with avocado oil then season with salt, pepper and Dak's Asian Zing seasoning or seasoning of choice.
  • Once done seasoning, sprinkle the corn starch all over the shrimp and let it sit for a few minutes
  • Once the air fryer is to temperature, spray both sides with cooking spray and place into the air fryer for 4-5 minutes
  • While shrimp is cooking place the chili sauce, peanut butter powder and lime juice into bowl and mix until combine
  • Once shrimp is cooked, toss into the chili sauce and serve with broccoil and cauliflower rice
  • Garnish with scallions, parsley and sesame seeds

Carrots have to be the most underrated vegetable and has to be one of my favorites!

If you don’t season carrots properly they can be super boring… I get it. Seasoning is required and these Roasted Maple Mustard Carrots are FULL of flavor!

Equipment

  • Sheet pan or casserole dish
  • Small bowl
  • Pastry Brush

Ingredients

  • 2 Pounds Carrots Peeled & Sliced vertically
  • 1 tsp Avocado oil spray
  • Salt & Pepper to taste

Glaze

  • 2 TBSP Maple syrup
  • 2 tsp Stone ground mustard
  • 1 TBSP Dijon mustard
  • 1 TBSP Minced garlic

Garnish

  • 1 TBSP Fresh parsley Chopped
  • Flaky sea salt to taste
  • Fresh black pepper to taste

Instructions

  • Preheat oven to 400 degrees
  • Peel carrots and cut vertically
  • Place carrots in or on a sheet pan or casserole dish
  • Lightly spray carrots with avocado oil and season with salt and pepper to taste
  • In a small bowl mix all of the glaze ingredients
  • Brush carrots with half of the glaze and place into the oven for 30-40 minutes ( depending on size of carrots )
  • Garnish carrots with remaining glaze, chopped parsley, flaky sea salt and fresh ground pepper

Need something east and delicious to bring to your next gathering or even to enjoy as a snack? This Cheesy & Spicy Bean Dip would be so perfect in a wrap with some steak or chicken. This would also be great to dip with some veggies. I decided to make my own chips using CutDaCarb flatbreads and it was perfect!

Ingredients

  • 6 CutDaCarb flatbread
  • Cooking spray
  • Garlic salt
  • 1 Can Fat free refried beans Aldi brand
  • 4 oz. Neufchatel Cheese Room temperature
  • 1 tsp Dak's Street Taco Seasoning or Taco seasoning
  • 2 Cans Rotel Drained
  • 2 Cups Fat free cheddar cheese Kraft Brand
  • Jalapeños Jarred
  • Scallions to garnish

Instructions

  • Preheat oven to 375
  • First you are going to cut the flatbreads into small triangles for chips. Cut in half, then again and again until small rectangles are formed so you can then cut diagonal to make triangles for chips.
  • Place the flatbreads on a sheet pan, spray with cooking spray and season lightly with garlic salt
  • Bake for about 5 minutes, checking every few until light golden. Bake is batches until you have desired amounts
  • In a casserole dish layer with fat free refried beans, the cream cheese, the Street Taco seasoning, drained rotel and the cheddar cheese.
  • Bake covered with foil for about 30 minutes until nice and melted and bubbly.
  • Turn on broil if you'd like a golden top
  • Garnish with jalapenos and scallions

Serves 6 at 1/2 cup portions each and includes CutDaCarb chips
