Broccoli Blueberry Salad with Chickpeas
This was such a good salad. It sounds bizarre but it totally works and was delicious.
Enjoy this for 2 WW and only 142 calories.
Here is what you need:
- Broccoli
- Canned chickpeas
- Blueberries
- Cucumbers
- Carrots
- Dried cranberries with reduced sugar
- Red onions
- Sunflower seeds
- Avocado oil
- Apple cider vinegar
- Lemon juice
- Dijon mustard
- Maple syrup
- Minced garlic
- Poppy seeds
- Salt
- Pepper
Fresh broccoli for this, not frozen.

Ingredients
Salad fix-ins
- 4 Cups Broccoli Chopped fine
- 1 Cup Chickpeas Drained & rinsed
- 1 Cup Carrots shredded
- 1 Cucumber Diced
- 1/3 Cup Red onion Diced
- 1 1/2 Cups Blueberries
- 1/4 cup Sunflower seeds
- 1/3 Cup Dried cranberries 50% less sugar
Dressing
- 1 tsp Avocado oil
- 2 tsp Dijon mustard
- 2 TBSP Lemon juice
- 1 TBSP Apple cider vinegar
- 1 tsp Poppy seeds
- 1 TBSP Pure maple syrup
- 2 Garlic cloves minced
- Salt to taste
- Black Pepper to taste
Instructions
- In the bowl add the chopped broccoli, shredded carrots, chopped cucumbers, diced red onion, sunflower seeds and dried cranberries.
- Add the dressing and season the salad with salt and pepper to taste.
