Broccoli Blueberry Salad with Chickpeas

This was such a good salad. It sounds bizarre but it totally works and was delicious.

Here is what you need:

  • Broccoli
  • Canned chickpeas
  • Blueberries
  • Cucumbers
  • Carrots
  • Dried cranberries with reduced sugar
  • Red onions
  • Sunflower seeds
  • Avocado oil
  • Apple cider vinegar
  • Lemon juice
  • Dijon mustard
  • Maple syrup
  • Minced garlic
  • Poppy seeds
  • Salt
  • Pepper

Fresh broccoli for this, not frozen.

The 50% less sugar really makes a difference in points and calories

Salad fix-ins

  • 4 Cups Broccoli Chopped fine
  • 1 Cup Chickpeas Drained & rinsed
  • 1 Cup Carrots shredded
  • 1 Cucumber Diced
  • 1/3 Cup Red onion Diced
  • 1 1/2 Cups Blueberries
  • 1/4 cup Sunflower seeds
  • 1/3 Cup Dried cranberries 50% less sugar


  • 1 tsp Avocado oil
  • 2 tsp Dijon mustard
  • 2 TBSP Lemon juice
  • 1 TBSP Apple cider vinegar
  • 1 tsp Poppy seeds
  • 1 TBSP Pure maple syrup
  • 2 Garlic cloves minced
  • Salt to taste
  • Black Pepper to taste


  • In the bowl add the chopped broccoli, shredded carrots, chopped cucumbers, diced red onion, sunflower seeds and dried cranberries.
  • Add the dressing and season the salad with salt and pepper to taste.
  • Enjoy!
