This dish was so easy to put together and kept me full for so many hours. It is PACKED full of protein from the pasta, cottage cheese and the chicken. It also has amazing flavor from Kettle & Fire Classic Chicken Bone Broth.

These meals are my favorite because pasta makes me happy! Easy pasta dishes make me even more happy!

This recipe is for a single serving, but you can DEFINETLY make this for a meal prep or for more than one.

Roasted Red Pepper Pasta with Chicken and Broccoli

Equipment

  • Air fryer or oven
  • Microwave
  • Saute pan
  • Small sauce pan for cooking pasta
  • Blender or mini food processor

Ingredients

  • Serving Barilla Protein+ Farfalle pasta dry

CHICKEN

  • 1 Chicken breast
  • Dak's Italian Blast to taste
  • Dak's Nothin But Ranch to taste
  • Salt & Pepper to taste

PASTA SAUCE

  • Avocado oil spray
  • 1 Shallot chopped
  • 1 TBSP Garlic minced
  • 1 TBSP Tomato paste
  • 1/2 Cup Roasted red peppers in water, Blended
  • 1/3 Cup Good Culture 2% Cottage Cheese Blended
  • 1/4-1/2 Cup Reserved pasta water
  • 1/4 Cup Kettle & Fire Classic Chicken Bone Broth Link in notes for discount
  • 1 Light Laughing Cow wedge
  • 1/2 tsp Dried oregano
  • Salt & Pepper to taste

SIDES

  • 1 Bag Steam in bag broccoli seasoned as you wish
  • Salt & Pepper to taste
  • 1 tsp Grated Parmesan Cheese to garnish

Instructions

  • First get the water going for your pasta
  • Next, season chicken to your liking and cook until 165 degrees. Set aside until ready to eat. I cooked mine in my air fryer at 380 degrees for about 10-12 minutes.
  • In a mini food processor add the roasted red peppers and cottage cheese. Set aside.
  • In a small sauté pan, spray bottle with avocado oil. Add the shallots and cook until translucent Add the garlic and cook for an additional 30 seconds.
  • Add the tomato paste and seasonings.
  • Alternating a little at a time. add the pasta water, chicken bone broth and roasted red pepper sauce. Adding slowly so the sauce doesn't break.
  • Season to taste with salt, pepper an additional seasoning if needed.
  • Add the laughing cow wedge and pasta. Fold in until melting and mixed all together.
  • Plate and add chicken and broccoli
  • Garnish and enjoy
