Looking for a cheesy and witty twist on a classic Italian dish? Look no further than Cauliflower Parmesan! This recipe is here to give the traditional eggplant parmesan a run for its money โ€“ or should I say, cheese?

Now, donโ€™t be fooled by the name. Cauliflower Parmesan may sound like a healthier alternative, but let me assure you, itโ€™s just as indulgent and delicious. Weโ€™re taking that humble cauliflower and turning it into a crispy, cheesy masterpiece that will have you coming back for seconds.

Here is what you will need:

  • Sheet tray
  • Large cauliflower heads
  • Garlic cloves
  • Avocado oil spray
  • Italian seasoning
  • Salt
  • Pepper
  • Oregano
  • Onion powder
  • Fat free mozzarella cheese
  • Shredded or Grated parmesan cheese
  • Marinara sauce (I use Aldi brand)
  • Fresh basil
  • Crushed red pepper flakes (optional)

Here is how to make it:

  1. Preheat oven to 425 degrees
  2. Slice heads of cauliflower into 1 inch thick slices โ€œsteaksโ€
  3. Place onto a parchment lined sheet tray
  4. Spray the cauliflower lightly with avocado oil
  5. Season with salt, pepper, Italian seasoning, onion powder and red pepper flakes
  6. Take the garlic and place into foil and close up the foil and place onto the sheet tray with the cauliflower.
  7. Bake for 20 minutes, flip cauliflower and bake for an additional 20 minutes
  8. Remove the garlic from the foil and smear all over the tops of the cauliflower
  9. Add the sauce, cheeses and oregano
  10. Place back into the oven until cheeses are melted
    1. Place under the broiler if more brown is desired
  11. Garnish with basil and enjoy!

Ingredients

  • 12 Garlic cloves
  • 2 Large Cauliflower heads
  • Avocado oil spray to coat cauliflower steaks
  • 1 TBSP Italian seasonin
  • 1 tsp Kosher salt
  • 1 tsp Black pepper
  • 1 tsp Oregano dried
  • 1/2 tsp Onion powder
  • 1/2 Cup Kraft fat free mozzarella cheese
  • 1/2 Cup Shredded parmesan cheese or grated
  • 1 Cup No sugar added pasta or marinara sauce
  • Fresh basil
  • Red pepper flakes Optional

Instructions

  • Preheat oven to 425
  • Slice cauliflower heads into 1-inch-thick slices "Steaks"
  • Place cauliflower onto a parchment lined sheet pan and spray lightly with avocado oil
  • Season both sides of cauliflower with salt, pepper, Italian seasoning, onion powder and red pepper flakes
  • Place garlic into foil and close up. Place onto sheet pan with cauliflower
  • Bake for 20 minutes then flip cauliflower and bake for an additional 2o minutes
  • Smear the roasted garlic all over the cauliflower followed by the sauce, cheese and sprinkle oregano.
  • Place back into the oven until the cheese is melted and golden brown top
  • Garnish with fresh basil and enjoy
