Cauliflower Parmesan

Looking for a cheesy and witty twist on a classic Italian dish? Look no further than Cauliflower Parmesan! This recipe is here to give the traditional eggplant parmesan a run for its money โ or should I say, cheese?
Now, donโt be fooled by the name. Cauliflower Parmesan may sound like a healthier alternative, but let me assure you, itโs just as indulgent and delicious. Weโre taking that humble cauliflower and turning it into a crispy, cheesy masterpiece that will have you coming back for seconds.

Here is what you will need:
- Sheet tray
- Large cauliflower heads
- Garlic cloves
- Avocado oil spray
- Italian seasoning
- Salt
- Pepper
- Oregano
- Onion powder
- Fat free mozzarella cheese
- Shredded or Grated parmesan cheese
- Marinara sauce (I use Aldi brand)
- Fresh basil
- Crushed red pepper flakes (optional)
Here is how to make it:
- Preheat oven to 425 degrees
- Slice heads of cauliflower into 1 inch thick slices โsteaksโ
- Place onto a parchment lined sheet tray
- Spray the cauliflower lightly with avocado oil
- Season with salt, pepper, Italian seasoning, onion powder and red pepper flakes
- Take the garlic and place into foil and close up the foil and place onto the sheet tray with the cauliflower.
- Bake for 20 minutes, flip cauliflower and bake for an additional 20 minutes
- Remove the garlic from the foil and smear all over the tops of the cauliflower
- Add the sauce, cheeses and oregano
- Place back into the oven until cheeses are melted
- Place under the broiler if more brown is desired
- Garnish with basil and enjoy!

Equipment
- Sheet pan
- Parchment paper
Ingredients
- 12 Garlic cloves
- 2 Large Cauliflower heads
- Avocado oil spray to coat cauliflower steaks
- 1 TBSP Italian seasonin
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 1 tsp Oregano dried
- 1/2 tsp Onion powder
- 1/2 Cup Kraft fat free mozzarella cheese
- 1/2 Cup Shredded parmesan cheese or grated
- 1 Cup No sugar added pasta or marinara sauce
- Fresh basil
- Red pepper flakes Optional
Instructions
- Preheat oven to 425
- Slice cauliflower heads into 1-inch-thick slices "Steaks"
- Place cauliflower onto a parchment lined sheet pan and spray lightly with avocado oil
- Season both sides of cauliflower with salt, pepper, Italian seasoning, onion powder and red pepper flakes
- Place garlic into foil and close up. Place onto sheet pan with cauliflower
- Bake for 20 minutes then flip cauliflower and bake for an additional 2o minutes
- Smear the roasted garlic all over the cauliflower followed by the sauce, cheese and sprinkle oregano.
- Place back into the oven until the cheese is melted and golden brown top
- Garnish with fresh basil and enjoy
