Zucchini Feta Pancakes
My Zucchini Feta Pancakes came out so amazing. These are not sweet pancakes, they are savory.
I took more zucchini from my garden and decided to turn them into some delicious zucchini pancakes. They were so easy to put together and only a few minutes to make.
These pancakes are a great way to get some vegetables into your day as well. If you follow WW (Weight Watchers) you will gain personal points back for eating these pancakes. They only have 200 Calories per serving and has 19.4g of protein in each serving.
Here is what you will need:
- Cooking spray/Avocado oil spray
- Zucchini
- Onion
- Quick oats
- Egg whites
- feta cheese (I use fat free)
- Scallions
- Seasonings (I use Dak’s Spices)
- Baking powder
- Baking soda
- Salt
- Tahini or syrup
Our garden keeps producing these amazing and large zucchinis and I’m loving all of the recipes that are coming from them.
I then used some ingredients that I usually have on hand and just created these delicious pancakes with what I had.
I took my Nutri Bullet and blended up some quick oats to make an easy oat flour.
I’ve found many different egg whites at many different stores for different prices. Costco has the best price. I like the small cartons because they don’t take up a lot of space in the fridge.
When it comes to the feta cheese, you can use whatever brand and percentage of fat you’d like. I had this one on hand and just used up the rest of the container.

The amazing tahini from The Tahini Goddess was the PERFECT “syrup” to add to these savory pancakes. I decided to use the Za’atar flavor, and it was delicious
Here is how to make it:
- Take the zucchini and shred fine using a hand cheese grater or the one that I shared.
- Take the shredded zucchini and place into a cheesecloth or a clean towel
- Squeeze all of the liquid out from the zucchini
- Place the zucchini into a bowl
- Grate the onion and add to the bowl
- Place the oats into a blender creating oat flour or use regular flour or store-bought oat flour and add to the bowl
- Add the egg whites
- Add the seasonings of your choice
- Add the baking powder and baking soda
- Take the batter and evenly make 6 pancakes
- Once the pancakes are golden brown on each side serve with your choice of garnish
- I used The Tahini Goddess Za’atar Tahini which made for a great “syrup” and flavor
Zucchini Feta Pancakse
Equipment
- Cheese grater
- Mini food processor or blender
- Cheesecloth or clean kitchen towel
- 1 Frying Pan
Ingredients
- Cooking spray/Avocado oil spray
Pancake Batter
- 3 Cups Shredded zucchini squeezed out
- 1/4 Cup Onions grated
- 1/2 Cup Oats ground into flour
- 1/2 Cup Egg whites
- 1/4 Cup Scallions Chopped
- 1/2 Cup Fat free feta cheese
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1/4 tsp Dak's Original Red or paprika
- 1/4 tsp Dak's Green Zest or seasoning of choice
GARNISH
- 1/2 TBSP The Tahini Goddess Za'atar tahini or tahini of your choice/syrup*optional*
Instructions
- Take the zucchini and shred
- Add the shredded zucchini to a clean towel or cheesecloth
- Squeeze out the liquid from the zucchini until dry
- Place the zucchini into a bowl
- Grate the onion and add to the bowl
- Add the oat flour, egg whites, feta, seasonings, baking powder, baking soda and scallions to the bowl
- Mix until combine and set aside
- Scoop out 6 even portions to make 6 pancakes (1/4 C-1/3 C batter each)
- Spray pan then Cook on low/medium heat
- Flip once golden brown
- Garnish with tahini or syrup and enjoy
