Bean & Cheese Omelet

Bean & Cheese Omelet

Alright, this is my new favorite way to make an omelet. In the notes, I have a little WW cheese hack for more bang for your buck.

This has been on repeat for weeks and I had to share immediately. I personally love any kind of Mexican flavorings and the food so I knew this would be a win in my book. 

This ENTIRE Omelet is ZERO WW points. Check out the ingredients and the WW app link in my notes so you can see how. 

353 calories and has 35.5 grams of protein. 

Here is what you need:

  • Eggs., Egg substitute or egg whites
  • Dak’s Green Zest or seasoning of choice
  • Salt
  • Pepper
  • Fat free refried beans
  • Fat free cheddar cheese
  • Fat free mozzarella cheese
  • Cilantro
  • My Pico de Gallo
  • Hot pepper relish (optional)
  • Light english muffin
  • Good Good jam
  • Fresh fruit of the side

 

 

     

Eggs are a great source of protein and are also zero points on WW. I love to use Dak’s Green Zest in my eggs for seasoning along with salt and pepper to taste. You can use any kind of seasoning you want. If you’d like to try out Dak’s Spices use code CHEFALLIE and click HERE.

 

Another great zero-point food are fat free refried beans plus the are amazing in omelets. 

Want to know a little secret? When you only use 20 grams of fat free cheese it is zero points. When you scan the cheddar and the mozzarella separately for only 20 grams each you get more cheese for zero points. Something I have done since the beginning of my weight loss journey for a little cheese hack.

This is the BEST spicy relish and I’m completely OBSESSED. I purchase this at Shop Rite but you can also get it HERE on Amazon. 

The sides I love to have with eggs or omelet are these light english muffins from Shop Rite. They are the best and only 2 WW for one. 

This is the BEST no sugar added jam. Grab yours HERE off of Amazon. 

Here is how to make it:

  1. Spray your nonstick pan with avocado oil.
  2. Set the heat to medium.
  3. In a small bowl whisk up the eggs.
  4. Once the pan has had time to warm up, pour the eggs into the pan.
  5. Take a spatula and pull the eggs away from the edges of the pan while tilting the pan and allowing the raw eggs to run into where you pulled them.
  6. Season the eggs with the Dak’s Green Zest or seasoning of choice.
  7. Season to taste with salt and pepper.
  8. Lower the temp and cover the eggs until fully cooked.
  9. While eggs are covered place the refried beans into the microwave for about 20-30 seconds.
  10. Once eggs are fully cooked add the refried beans on one side of the omelet.
  11. Take the cheeses and sprinkle all over and fold omelet in half.
  12. Cover again allowing to melt the cheeses.
  13. Remove, add the relish and garnish with cilantro.
  14. Enjoy!

  • 1 Non-stick frying pan
  • Spatula

Ingredients

  • 3 each Eggs
  • 1/2 tsp Dak's Green Zest or seasoning of choice
  • Salt & pepper to taste
  • 1/3 Cup Fat free refried beans warmed
  • 20 grams Fat free cheddar cheese Kraft brand
  • 20 grams Fat free mozzarella Kraft brand
  • 1/4 Cup Pico de Gallo Recipe HERE
  • 2 TBSP Wickle's hot pepper relish Optional
  • Cilantro to garnish, optional

Instructions

  • Get your nonstick pan ready with some avocado oil spray
  • Whisk up 3 eggs
  • Pour into the greased nonstick pan
  • Season with Dak's Green Zest or seasoning of choice
  • Season to taste with salt and pepper
  • Warm up the refried beans in the microwave for about 20 seconds
  • Place them onto one half of the omelet.
  • Take the cheeses and sprinkle all over and fold omelet in half.
  • Cover again allowing to melt the cheeses.
  • Remove, add the relish and garnish with cilantro.Enjoy!ย
