Buffalo Chicken Crispy Tacos
The anticipation of this recipe was real. These are a meal I now have on repeat as well as just my chicken recipe that is used for this.
The chicken is so versatile for so many other things like salads, wraps, tacos, just as is without chopping it up and so much more. Just do not add the buffalo sauce and you’ll be golden for so many ideas. Grab my Blackened Chicken recipe HERE.
Only 6 WW for the entire plate you see in the picture above. Add a side that is ZERO WW points and you have a MASSIVE meal for very little points and packed with protein as well. Only 4 WW for the tacos and side of broccoli minus the dipping sauce.
Here is what you need:
- Air fryer
- Mini sheet trays for air fryer, order one HERE
- Cooking spray
- Parchment paper
- Mixing bowl
- Salt
- Pepper
- Frank’s hot sauce
- Hidden Valley ranch seasoning
- Mission ultra-thin corn tortillas
- Kraft fat free cheddar cheese
- Bolthouse chunky blue cheese yogurt dressing
- Nonfat Greek yogurt
- Shredded lettuce
- Cilantro
- Side of choice

You can use fresh, frozen or even a rotisserie chicken for this recipe. If using frozen, make sure to defrost.

Add as much hot sauce as you would like as well as the ranch seasoning.
These are my favorite corn tortillas to use. They come out so crispy and they are so low in calories and WW points.
When you use a half a cup of the Kraft fat free cheddar cheese or the Kraft fat free mozzarella cheese it is only 1 WW point.
I always mix the Bolthouse yogurt dressings with some nonfat Greek yogurt to bulk up and it NEVER makes the taste less.
Here is how to make it:
- Pour the hot sauce and ranch seasoning into the bowl with the chopped-up chicken and coat.
- Once ready, set aside until ready.
- Take the corn tortillas and wrap them into a damp paper towel and place into the microwave for about 20 seconds.
- This helps them not to break while assembling.
- Take the buffalo chicken and even distribute evenly between the corn tortillas.
- Take a 1/2 cup of cheese for every 4 tortillas and sprinkle evenly between them.
- Fold over the tortillas and place onto the parchment lined sheet tray.
- Spray the tops of the folded tortillas and place another sheet tray on top to help them from not unfolding during the cooking process.
- Cook for about 5 minutes then remove the top sheet tray.
- Cook until golden, flip and cook again until golden and crisp on the other side.
- Serve with your favorite side and dipping sauce.
Buffalo Chicken Crispy Tacos
Equipment
- 1 Air fryer or oven
- Mixing bowl
- 2 Mini sheet trays
Ingredients
- Cooking spray
- 8 each Mission ultra-thin yellow corn tortillas 4 per serving
BUFFALO CHICKEN
- 1 Pound My Blackened Chicken Chopped fine, Recipe HERE
MIX IN
- 1/4-1/3 Cup Frank's buffalo sauce
- 1 tsp Hidden Valley ranch seasoning
FILLING
- 1 Cup Kraft fat free cheddar cheese
GARNISH
- Iceberg lettuce shredded
- Cilantro to garnish
DRESSING MIX
- 4 TBSP Bolthouse chunky blue cheese
- 4 TBSP Nonfat Greek yogurt
AIR FRYER BROCCOLI SIDE
- 1 Bag Frozen steam in bag broccoli or fresh
- Avocado oil spray
- 1/4 tsp Garlic powder
- 1/4 tsp Onion powder
- Salt & pepper to taste
- 1/2 tsp Dak's Green Zest seasoning or Italian seasoning
- Truffle seasoning optional & to taste
Instructions
- Pour the hot sauce and ranch seasoning in the bowl with the chopped chicken.
- Once combine set aside.
- Place the corn tortillas into a damp paper towel and microwave for 20 seconds.
- Take the chicken and even distribute the chicken between the corn tortillas.
- Add the cheese evenly between all of the tortillas and fold in half.
- Place them onto a sheet pan lined with parchment paper.
- Spray the tops of the tortillas with cooking spray.
- Take another sheet pan and place on top of the folded tacos.
- Place into the air fryer or oven for about 5-6 minutes and then remove the top sheet pan.
- Continue cooking until golden brown on top.
- Flip and brown the other side.
- Once done, garnish and enjoy with a dipping sauce.
AIR FRYER BROCCOLI
- Take the steam in bag broccoli and cook according to the instructions.
- Once done, squeeze out as much water from the bag as you can.
- Take the broccoli and place onto a greased air fryer basket or tray.
- Season the broccoli with seasonings and place into the air fryer until crisp.
- Garnish with the truffle seasoning (optional) and enjoy.
