Air Fryer Salmon Bites

An amazing dinner done in under 20 minutes

Equipment

  • Air fryer
  • Saute pan

Ingredients

SALMON

  • 1 pound Salmon filet cut into 1" chunks
  • 1 tsp Dak's Original Red seasoning or paprika
  • 1 tsp Dak's Asian Zing seasoning or seasoning of your choice
  • 1/4 Cup G Hughes Orange Ginger Marinade

SIDES

  • 4 1/2 Cups Cauliflower rice I used steam in bag
  • 3 Cups Fresh spinach chopped roughly
  • 1/2 tsp Garlic powder
  • Salt & pepper to taste

GARNISH

  • Dak's Everything But Tha Salt sesasoning or everything but the bagel seasoning
  • Scallions to garnish
  • Sriracha optional

Instructions

  • Take the skin off of the salmon
  • Cut salmon into 1" chunks
  • Place salmon chunks into a bowl with the orange ginger marinade
  • Season with the Dak's Original red, Asian Zing and salt and pepper to taste
  • Set aside for about 5-10 minutes
  • While that is marinading, place the steam in bag cauliflower into the microwave
  • Once all done pour into a skillet on medium heat
  • While you are cooking up the cauliflower, set air fryer to 390 degrees. Place salmon chunks onto the air fryer basket or tray making sure to spray with cooking spray to avoid sticking
  • Cook for 4-5 minutes making sure to flip halfway through
  • While salmon is cooking Sauté the cauliflower for a few minutes to draw out the moisture then add the spinach, garlic powder, Asian Zing and season with salt & pepper
  • Once everything is done add to a bowl with the salmon bites on top of the rice, garnish with scallions and everything but tha salt seasoning and enjoy
  • Add some sriracha for an extra punch of heat, optional.

Equipment

  • Air fryer or oven
  • Bowl for mixing

Ingredients

  • 1 Eat Royo Bagel or bagel of your choice
  • 1 Chicken breast or Rotisserie Cooked & seasoned to taste
  • 2 tsp Dak's Nothin But Ranch Seasoning or seasoning of your choice
  • Dak's Butt Kickin Buffalo seasoning to taste
  • 3 TBSP Non fat greek yogurt
  • Hot sauce to taste, I used Firelli Italian hot sauce
  • 2 TBSP Bolthouse Cucumber ranch dressing
  • 1 Light laughing cow wedge
  • Salt to taste
  • Black pepper to taste
  • 1/4 Cup FF Cheddar cheese
  • 1/4 Cup FF mozzarella
  • Scallions to garnish

Instructions

  • In a bowl shred the chicken if not already shredded.
  • Add the ranch seasoning, Dak's Butt Kickin Buffalo, yogurt, hot sauce (to taste), 1 TBSP ranch dressing, laughing cow, salt and pepper to taste. Mix until combine.
  • Slice the bagel in half, sprinkle the cheese on top and then add the chicken mixture.
  • Place into a 350-degree air fryer or oven and bake until cheese is melted, and bagel is toasted.

  • Garnish with more hot sauce, ranch dressing and scallions.

Ingredients

NACHO CHIPS

  • 2 Cut Da Carb flatbreads Cut into triangles
  • Cooking spray or avocado oil for chips
  • Dak's Street Taco seasoning or taco seasoning of your choice
  • Garlic salt to taste

CHICKEN

  • 1 Chicken breast Cooked or rotisserie. I used leftover Cook's Venture chicken that i seasoned with Dak's Nothin But Ranch, salt & pepper.
  • 2 TBSP Taco sauce I used Ortega

TOPPINGS

  • 1/2 Cup Pinto beans or beans of your choice, rinsed
  • 1/2 Cup Roasted red peppers in water, chopped
  • 1/2 Cup Fat free cheddar cheese
  • 1/4 Cup Banana peppers Whole or chopped
  • 2 TBSP Salsa I used Mateo's
  • 2 TBSP Nonfat Greek yogurt seasoned with ranch seasoning or taco seasoning. I used Dak's

GARNISH

  • Scallions to garnish
  • 2 Cups Romaine lettuce Shredded
  • Cilantro to garnish

Instructions

  • First cut the Cut Da Carb flatbreads into triangles
  • Place onto a sheet tray or air fryer tray
  • Spray lightly with avocado oil or cooking spray
  • Season with taco seasoning and garlic salt
  • Place into an oven at 350 or air fryer at 350 until lightly toasted (2-3 minutes) They cook fast, do not burn
  • While chips are being cooked, place chopped chicken in a bowl with the taco sauce and mix until coated. Place chicken and beans into a microwave to warm up.
  • Once chips are all cooked place onto a sheet tray lined with parchment or air fryer try lined with parchment
  • Start assembling your nachos with desired toppings that'll be hot from the air fryer or oven. So, leave off any cold desired toppings and garnish until ready.
  • Place back into the oven or air fryer until cheese is melted then garnish with lettuce, scallions, cilantro, salsda and yogurt mixture
