Ingredients

  • 1 Large Eggplant or two small
  • 2 Packets Shake n Bake I used Aldi brand
  • 1 TBSP Italian seasoning
  • 1 TBSP Dried basil
  • 1 TBSP Oregano
  • 1/2 tsp Dak's Italian Blast discount code:chefallie10
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 - 3/4 Cup Egg Substitute seasoned with a little more Italian seasoning
  • Marinara I used my Sunday sauce, recipe on my blog
  • 1 Cup Fat free mozzarella Kraft brand
  • 4 oz. Part skim mozzarella I used Aldi brand
  • Fresh basil to garnish
  • Grated parmesan to garnish

Instructions

  • Preheat oven to 350
  • Preheat air fryer to 380
  • Slice your eggplant into 1/2 inch slices
  • Place slices of eggplant on pieces of paper towel and sprinkle with salt. Let sit for about 5 minutes then dab moisture out
  • Season the breadcrumbs with the Italian seasoning, dried basil, oregano , Dak's Italian Blast, salt and pepper. Mix up
  • Season egg substitute with a little more Italian seasoning
  • Take each slice of eggplant and dip into the egg mixture then into the breadcrumbs.
  • Once all done, spray the air fryer basked or tray with cooking spray to prevent sticking. Air fry at 380 for about 10 minutes
  • Once all are air fried, coat the bottom of the casserole dish with sauce
  • Time to layer up. Place eggplant down, then more sauce, Cheese, more eggplant then more sauce. Once all done sprinkle all the cheese over the top
  • Bake in the oven for about 10 minutes or until cheese is nice and melted. If you desire turn broil on until nice and golden
  • Garnish with fresh basil and some grated parmesan
  • Serve as is and enjoy!

Ingredients

  • Romaine lettuce Chopped
  • 3 oz. Chicken breast
  • Avocado oil spray
  • Dak's Super Greek seasoning code on homepage
  • 1/2 Cup Red onions Chopped
  • 1/4 Cup Grape tomatoes Sliced in half
  • 1 Mini cucumber Chopped
  • 4 each Black olives, reduced sodium Sliced in half
  • 1/4 Cup Bell peppers Chopped
  • 1/3 Cup Athenos Traditional crumbled fat free feta cheese
  • 1 TBSP Ken's Simply Greek Vinaigrette
  • 1/3 Cup Non fat greek yogurt
  • 1 tsp Lemon juice
  • 4 each Stonefire Naan Dippers
  • Avocado oil spray
  • 1/2 tsp Oregano
  • Garlic salt to taste
  • Parsley to garnish

Instructions

  • First season the chicken breast with a light spray of avocado oil, season with salt, pepper and Greek seasoning. Coat very well
  • Air fry at 400 for about 12-15 minutes or until internally 165 degrees. Set aside to rest
  • While chicken is resting spray naan dippers lightly with avocado oil and season with oregano and garlic salt. Air fry at 400 for about 5-7 minutes or until crispy. Set aside
  • Time to make the dressing. Take the 1 TBSP of the greek dressing, non fat greek yogurt, lemon juice and season with salt and pepper to taste.
  • To a large bowl, add the lettuce, all of the veggies and feta cheese
  • Toss with the dressing, slice the chicken and place on top or mix into the salad and dont forget those naan croutons. Crumble up and sprinkle all over the salad. Garnish with some parsley and enjoy!

Ohhhhhmmmmerrrrrggeerrddd! This beauty right here was by far the best “fried” chicken sandwich I’ve made yet!! Super easy and scrumptious! 😋 Made this bad boy in my air fryer who is my best friend!

Serves 4 people , each cutlet is 3 WW💙💜 8💚


INGREDIENTS:
• 2 Pounds chicken breast
( Pounded to 1/2 Inch thick then each breast cut in half or 8oz. Each breast )
• 1 tsp @flavorgod Buffalo seasoning
• 1 tsp @daksspices Nothin But Ranch
• Salt & Pepper
• 2T Cornstarch
• 1/2C Liquid egg whites
• 64g Shake N Bake extra crispy
( 1 packet in box )
• Avocado oil spray
• 1T Land O Lakes light butter with canola oil
• 2 tsp @mccormickspice Ranch
•1/4C – 1/2C @franksredhot Sauce
( Depending in how hot you want it)
• 1 Light Bun – 2SP
( 647 Brand )
• 1 @ww Jalapeño string cheese – 1SP
• Lettuce 🥬 ,Tomato 🍅 & dill pickle chips – 0SP
• 2T @bolthousefarms Cucumber ranch – 1SP
.
• Side of roasted carrots – 0SP

Peel carrots, cut, season with salt, pepper & Italian seasoning. Spray lightly with avocado oil spray and roast in oven at 400 for 30 minutes or until fork tender
.
STEPS:
• Preheat air fryer to 390
• Melt butter then mix hot sauce and ranch in bowl set aside
• Pound out the chicken to 1/2 inch thick. My chicken breast was about 1 pound each breast so I cut each in half making 8oz. Cutlets
• Pat dry , season with salt, pepper, @flavorgod buffalo & @daksspices nothin but ranch
• Take the 2T of cornstarch and sift over chicken on both sides
• Dip into egg whites
• Dip into Shake N Bake
• Spray both sides with avocado oil spray
• Air fry at 390 for 8-10 minutes or until thermometer reads 155/160
• Toss in hot sauce
• Place cheese on top & air fry to melt for a 1 minute
• Drizzle more hot sauce over chicken
• Build sandwich & Enjoy! 🤤
