This has to be one of my new favorites. The flavors are so nice and work so well together. Not only was this an extremely easy recipe to put together, the filling can be used just for a chicken salad or a hot dip.

  • Small casserole dish
  • Bowl for mixing
  • Mini food processor ( Optional )
  • Knife
  • Cheese grater
  • Foil

Ingredients

  • 2 Chicken breasts 8 oz. or rotisserie chicken
  • 2 tsp Dak's Nothin But Ranch Seasoning
  • 2 tsp Dak's Green Zest seasoning
  • Salt & Pepper to taste
  • 1 Cup Frozen spinach Drained
  • 3/4 Cup Artichokes ( In water ) Chopped
  • 1/2 Cup Onion Diced
  • 1/2 Block Light cream cheese or whipped cream cheese
  • 1 Cup Fat free mozzarella Kraft brand
  • 1/2 TBSP Dak's Nothin But Ranch
  • 1/2 TBSP Dak's Green Zest
  • Salt & Pepper to taste
  • 3 Cut Da Carb flatbreads find them right on the site
  • 1 Cup Green salsa verde Aldi brand
  • 2 oz Part skim shredded mozzarella
  • Cilantro to garnish, or parsley

Instructions

  • Preheat oven to 375.
  • Season chicken breast with 2 tsp Dak's Nothin But Ranch and 2 tsp Dak's Green Zest. Season with salt and pepper to taste.
  • Air fryer at 400 for about 10 minutes or until internal temperature reaches 165 ( Set aside to rest and cool ) If you do not have an air fryer, bake at 350 for about 15-20.
  • While chicken is cooling , grab your mini food processor or a knife and chop up the artichokes and onions.
  • In a large bowl start to add all ingredients that are ready.
  • Once chicken has cooled, place into the mini food processor or chop up with a knife super fine. Add to the bowl.
  • Drain the spinach and add to the bowl.
  • Add the shredded mozzarella and the light cream cheese. You can use whipped cream cheese if you do not have light.
  • Slice the flat breads in half horizontally, set aside.
  • Add remaining Dak's seasonings to the bowl and salt & pepper to taste.
  • Once everything is into the bowl , mix up well.
  • On the bottom of the casserole dish, put 1/2 cup of the verse salsa
  • Take a heaping 1/3 cup of the mix and place into the flatbread pieces, roll up and place into the casserole ( I used a 10x7 )
  • Once all six enchiladas are in the casserole, pour the remaining salsa verde on top and sprinkle the part skim mozzarella. If you don't have part skim, use more fat free mozzarella.
  • Spray one side of the foil with cooking spray and cover the casserole with the foil, bake at 375 for about 20 minutes
  • Uncover and bake for another 5-10 minutes, you can also set to broil for a little to get a tad brown on top.
  • Garnish with cilantro or parsley

It is time for us to start clearing out the freezer in time for us to go camping. So here is an easy freezer grab meal for those that like quick meals or for those that need to clear out their freezers just like me.
All you need is your favorite freezer mac & cheese, some BBQ sauce and some veggies to bulk up and add in or on the side. This meal came together in about 30 minutes and was a perfect comfort meal and no stress meal as well.

  • Microwave

Ingredients

  • Spaghetti Squash
  • Avocado oil spray to lightly coat squash
  • Salt & Pepper to taste
  • 1 Package Trader Joe's Guilt Free Mac & Cheese Frozen
  • 5 oz. Chicken tenders I used Butcher Box ( Link on my homepage )
  • Dak's BBQueen Seasoning
  • Salt & Pepper to taste
  • 2 TBSP Sweet & Spicy BBQ Sauce GHughes Sugar Free
  • 1 Bag Frozen cauliflower
  • 1 Bag Frozen broccoli
  • Avocado oil to lightly coat veggies
  • Salt & Pepper to taste
  • Scallions to garnish
  • 1/4 Bag Quest protein chips Crushed for garnish

Instructions

  • First set oven to 425
  • Get sheet pan and place frozen broccoli and frozen cauliflower down. Season with salt and pepper and spray lightly with avocado oil and toss
  • Slice spaghetti squash in half, scoop out innards and spray lightly with avocado oil. Season with salt and pepper and place open side down onto the same sheet pan as the broccoli and cauliflower
  • Roast at 425 for about 25 minutes ( set aside )
  • While veggies are roasting. Prepare the chicken tenders. I clean the cartilage out. I have a video of how to do this on my Instagram back in my highlights under hacks.
  • Once clean, pat dry with a paper towel. Season with salt , pepper and Dak's BBQueen
  • In an air fryer set to 390/400. Spray basket or tray with cooking spray to prevent chicken from sticking
  • Air fry for about 8-10 minutes or until internally 165
  • Half way of cooking. take the BBQ sauce and brush both sides and continue cooking
  • While chicken is cooking take the frozen mac & cheese and follow package directions
  • Take your bowl , mix the mac & cheese with some spaghetti squash ( take a fork and scrap it out. I also cut up a tad for better bites )
  • Once chicken is done add into the bowl with your roasted veggies
  • I topped the mac & cheese and the chicken with some crushed up Quest chips for some crunch and extra flavor
  • This meal was so delicious and extremely easy! Definitely a meal for those hectic days or when you just want an easy comfort meal.

These juicy buffalo chicken bites are a spicy air fried dish that any age can enjoy!

With an easy homemade gorgonzola ranch for dipping, this dish can make an amazing weeknight dinner for a healthier choice with an amazing restaurant quality!

โ€ข 1 Pound chicken breast
โ€ข 1/2 Cup unsweetened almond milk with one @egglandsbest egg
โ€ข 1/3 Cup flour mixed with
@daksspices Butt kickin Buffalo seasoning, salt & pepper
โ€ข 4 Bags of @peatosbrand fiery onion
โ€ข 44g Plain corn flakes
Blend @peatosbrand & corn flakes in mini food processor or blender with salt & pepper to taste *
โ€ข 1/2 Cup @franksredhot
โ€ข Celery for garnish

GORGONZOLA RANCH:
โ€ข 1/2 Cup non fat Greek yogurt
โ€ข 1 oz. @aldiusa Gorgonzola crumbles
โ€ข 1 tsp @hidden.valley Ranch seasoning
โ€ข 1/2 tsp dried chives
โ€ข Salt & Pepper to taste
*MIX EVERYTHING UP, PLACE IN FRIDGE UNTIL READY TO SERVE*

STEPS:
โ€ข Preheat air fryer to 380, I use my @gowiseusa
โ€ข Cut chicken breast into even bite size pieces , season with salt & pepper. Set aside.
โ€ข In one bowl place the almond milk and the egg and whisk together
โ€ข In another bowl place the flour, @daksspices Butt Kickin Buffalo, salt & pepper
โ€ข In the last bowl place the @peatosbrand & corn flakes
โ€ข Batter up: Dip into the milk/egg, Flour ( shake excess off ) , back to egg then to @peatosbrand / corn flake mixture. Place onto a sheet pan until all are breaded and ready to go.
โ€ข Spray air fryer basket/inserts with cooking spray. Place chicken in ( making sure they arenโ€™t crowded ) spray tops of chicken bites and air fry until internal temperature reaches 165
โ€ข You can enjoy as is, or toss the chicken bites in some @franksredhot like we did for some extra spice
โ€ข Enjoy with my homemade Gorgonzola ranch or your choice of dipping sauce
