Berry & Lemon Baked Oatmeal Bowl

This reminded me of Spring. The combination of my berry sauce and lemon just works so well together. It kind of gave me muffin vibes.

This beauty is only 5 WW, 431 calories and has 32.9 grams of protein in it. 

 

Here is what you need:

  • Nutri Bullet blender or food processor
  • Unsweetened almond milk
  • Quick oats
  • Frozen cauliflower rice
  • Banana

  • Vanilla extract
  • Lemon extract
  • Lemon zest
  • Salt

Don’t be scared of the cauliflower rice. You CANNOT taste it, it adds bulk to the bowl and veggies to help you!

   

These are the quick oats I get from Aldi. They are great and very inexpensive.

I like using bananas in my oatmeal bowls, but if you do not like bananas you can use an egg or yogurt as a substitute. 

     

The only unsweetened almond milk I purchase is from costco and it is the shelf-stable one (until opened).

     

Again, another wholesale club purchase. I LOVE this vanilla and since I use vanilla A LOT, I buy it in bulk.

 

Fresh lemon zest makes this dish come alive and HIGHLY recommended.

I like using lemon extract over fresh lemon juice since it is a stronger lemon flavor. You can grab lemon extract anywhere but click HERE for it off of Amazon.

I found this coconut sugar at Shop Rite and will not buy any other one. You can have 1 tsp for 0 WW points. I add this to my lattes in the morning and sprinkle it on top of all of my baked oatmeal bowls as well. 

Again with buying it in bulk. I am OBSESSED with this cinnamon from Sam’s Club. It is DELICIOUS! If you have a Sam’s Club I HIGHLY recommend trying this one out. 

Salt and baking powder are a must in all of my baked oatmeal bowls and something that is always on hand in my house.

 

Here is how to make it:

  1. Preheat oven to 400 degrees.
  2. In the nutribullet, add the oatmeal base ingredients and blend until smooth.
  3. Pour the batter into the greased oven safe bowl.
  4. Take my Berry Sauce and place some into the center of the batter.
  5. Sprinkle the coconut sugar over the top of the batter.
  6. Place into the over for 20-25 minutes.
  7. Garnish with more of my Berry Sauce and enjoy!

OATMEAL BASE

  • 1/2 Cup Unsweetened almond milk
  • 1/2 Cup Quick oats
  • 1/2 Cup Frozen cauliflower rice
  • 1 tsp Baking powder
  • 1/2 Banana
  • 1 Scoop Sweat Ethic or protein powder of choice
  • Zest of lemon
  • 1/4 tsp Lemon extract
  • 1/4 tsp Vanilla extract
  • 1 pinch Salt

TOPPING

  • 1 tsp Coconut sugar

CENTER

  • 1/3-1/2 Cup Berry Sauce Recipe HERE

GARNISH

  • Pancake syrup optional

Instructions

  • Preheat the oven to 400 degrees.
  • In the blender add all of the oatmeal base ingredients.
  • Blend until smooth.
  • Pour the batter into a lightly greased oven safe baking dish.
  • Place my Berry Sauce into the center of the batter.
  • Sprinkle the coconut sugar over the batter.
  • Place into the oven for 20-25 minutes.
  • Garnish with pancake syrup and enjoy.
