Breakfast Potato Bowl
This recipe was something that just came to me one morning. I wanted something with potatoes rather than toast.
I chopped up some Yukon gold potatoes and this dish came alive.
Took about 20 minutes from start to finish and it is SUPER filling and packed with flavor!
Only 3 WW and 432 calories for the entire plate you see here, even with the cheeses! (WW hack, see recipe)
Here is what you will need:
- Microwave
- Chopper or knife, Chopper linked HERE
- Avocado oil spray
- Nonstick frying pan
- Yukon gold potatoes
- Thin n Trim chicken sausage, or chicken sausage of choice
- Eggs
- Fat free mozzarella, Kraft brand
- Fat free cheddar, Kraft brand
- Salt
- Pepper
- Dak’s Spices Green Zest, optional
- Fresh chives or fresh scallions

You will want to have a non-stick pan for this recipe.

Equipment
- Non-stick frying pan
- Stove
Ingredients
- 141 grams Yukon gold potatoes Large cubes (1/2 inch)
- 1 Thin n Trim chicken sausage
- 3 Eggs
- Dak's Spices Green Zest or seasoning of choice
- Salt to taste
- Black pepper to taste
- 20 grams Kraft fat free cheddar cheese
- 20 grams Kraft fat free mozzarella cheese
- Hot sauce optional
- Chives to garnish
Instructions
- First take the potatoes and chop into large cubes (about 1/2 inch).*Cut by hand or use this chopper from Amazon. Click HERE for link.
- Place into the microwave for two minutes or until tender
- In a medium heated skillet, spray some avocado oil then add the potatoes
- Sauté for a few minutes then cut up the chicken sausage and add to the same pan as the potatoes.
- In the same pan or a new one, cook your eggs to your liking.
- Sprinkle the cheeses onto the potatoes and sausage and allow to melt.
- Place your cooked eggs on top of the potatoes and sausage
- Enjoy!
