What is needed:

  1. Light bread, I used Old Thyme 647 Italian bread brand
  2. Rotisserie chicken or baked and seasoned chicken breast
  3. Light cheese wedges
  4. Fat free cheddar cheese
  5. Hot sauce
  6. Garlic powder
  7. Light sharp cheddar cheese
  8. Ranch seasoning
  9. Nonfat Greek yogurt
  10. Yogurt ranch dressing
  11. Salt 
  12. Pepper

Ingredients

  • 2 Slices Old Thyme 647 Italian bread or bread of choice

CHICKEN MIXTURE

  • 4 oz Rotisserie chicken or seasoned chicken breast Chopped fine
  • 2 TBSP Chalula hot sauce or hot sauce of choice
  • 1 tsp Hidden Valley ranch seasoning
  • 1/2 tsp Garlic powder
  • Black pepper to taste
  • Salt to taste
  • 1 wedge Light laughing cow wedges
  • 1/4 Cup Kraft fat free cheddar cheese
  • 1 oz Cabot lite 75 white sharp cheddar cheese

DRESSING

  • 1 TBSP Nonfat Greek yogurt
  • 1 TBSP Bolthouse chunky blue cheese yogurt dressing

Instructions

  • Preheat the oven to 400 degrees
  • In a bowl combine all of the chicken mixture ingredients. Mix until combined
  • Lightly toast the bread and add the chicken mixture evenly between the two slices
  • Sprinkle both of the cheeses evenly between the two slices
  • Place into the oven until the cheese is melted
  • Mix the yogurt and the blue cheese dressing together
  • Drizzle on top of the slices and enjoy
