Cheesy Beef and Bean Enchiladas


By far one of the easiest recipes, I’ve made and one of our family favorites!
You can have TWO for only 6 WW and 321 calories! (calories are without yogurt topping) but you can certainly substitute for lean ground turkey or chicken for lower points and calories.
These cheesy beef and bean enchiladas are made with just a few simple ingredients that you probably already have on hand!

It has seasoned ground beef, beans and cheese all rolled up into my favorite flatbreads then smothered in cheese and sauce!
Here is what you need:
- 96/4 Ground beef. Sub for ground lean turkey or chicken for less WW points & calories
- Dak’s Taco Knight & Dak’s Street Taco seasoning or Taco seasoning of choice

- Water
- Garlic powder
- Onion powder
- Salt
- Pepper
- Fat free cheddar cheese
- Taco sauce or a can of enchilada sauce with some salsa added

- Nonfat Greek yogurt
- Hidden Valley ranch dry seasoning
- Limes
- Cilantro
- Toppings of choice
You can use lean ground beef like this or lean turkey or ground chicken for less WW points and calories.
I personally love taco sauce and refried beans, so this was a no brainer. If you do not have taco sauce, you can use enchilada sauce and mix in your favorite salsa.

The cheese I use, you can use what you would like to use.

Cilantro is optional and then garnish with your favorite toppings.
This is the topping I use for these. I just mix nonfat Greek yogurt with some ranch seasoning and its the best and ZERO WW points.
Here is how to make it:
- Preheat oven to 375 degrees.
- In a pan brown your meat.
- Once cooked through, add the taco seasoning and season salt and pepper to taste.
- Once seasoned through add the refried beans.
- Add some water to help prevent burning and drying out.
- In a casserole dish, pour half the taco sauce down.
- Cut the 4 flatbreads in half (horizontally) creating 8 smaller rectangular shapes.
- Take the cheese and separate into two separate bowls.
- Lay the flatbreads down and take about 1/3 cup of the meat mixture into the middle of the flatbreads.
- You can also weigh out the meat and even divide between all of the flatbreads.
- Sprinkle some cheese on top of the beef and roll up each and place into the casserole dish.
- Once all rolled up and into the casserole dish, pour remaining taco sauce over the flatbreads.
- Sprinkle remaining cheese on top and spray the cheese with some cooking spray to help melt the cheese.
- Cover the casserole fish with some foil and bake for about 20 minutes.
- Remove foil and continue baking for an additional 5 minutes to crisp the cheese up on top.
- Garnish the top with some cilantro.
- Add toppings of your choice and enjoy!

- 1 Pound 96/4 Ground beef turkey or chicken
- Dak's Taco Kight seasoning or seasoning of choice
- 1 Can Fat free refried beans
